Gluten-Free Blood Orange Mini Bundt Cakes
These easy to make gluten-free mini bundt cakes are moist, dotted with poppyseeds and loaded with fresh blood orange flavour.

Preheat oven to 350 degrees.
Grease a 6 mini bundt cake pan well.
In a stand mixer add the softened butter and sugar and mix well.
Add the eggs and beat on high speed until smooth. Scraping sides of bowl to incorporate all.
Add the juice and zest from the blood oranges as well as the vanilla.
In a small bowl whisk the dry ingredients together.
Add the dry ingredients plus the buttermilk and beat until batter is smooth.
Pour batter into the small greased bundt pan and bake for 25 minute.
Remove and cool before glazing.
To glaze-whisk the blood orange juice and icing sugar togehter and pour a small amount over each cake.
