Gluten-Free Socca
Socca or chickpea flatbread is a naturally gluten-free flatbread that you can eat warm, cut into triangles and dip into soup or stew or as a base for toppings.

In a medium bowl whisk the ingredients together until smooth.
Let sit for 15 minutes.
Preheat broiler.
Pour 1-2 tsp oil into a cast iron frying pan. Place pan in oven for 5 minutes.
Use 2 oven mitts to remove hot pan from oven
Pour 1/2 the socca batter into the hot pan.
Place back in oven and broil for 4-5 minutes.
Remove from oven and use a flipper to remove the socca. Place on a paper towel lined plate.
Repeat with remaining batter.
