Have you heard about socca? It is a naturally gluten-free flatbread that you can eat warm, cut into triangles and dip into soups and stews or as a base for toppings. This easy socca recipe is not only vegan, but also gluten and grain-free. Socca bread is often referred to as a chickpea flatbread and is made with just a handful of ingredients. Chickpea flour<\/a>, water, oil and zaatar seasoning<\/a> is all that is needed. You could substitute dried rosemary, oregano or other spices but I am a big fan of zaatar<\/a>.<\/p>\n\n\n\n

Socca can be baked in a pizza oven, or a cast iron frying pan or even on a baking sheet. For this recipe I used a Le Creuset cast iron frying pan<\/a>. The chickpea flour gives a delightful nutty taste to the flatbread.<\/p>\n\n\n\n

With a sprinkle of zaatar <\/a>and some sea salt this gluten-free socca makes a healthy snack or as I share below, the perfect base to hold a nicoise salad. Socca is a savoury crispy pancake made with simple and clean ingredients.<\/p>\n\n\n\n
