This easy gluten-free caprese salad takes less than 5 minutes to prep and is ready in less than 10 minutes. A perfect summer salad. Filled with fresh basil, mozzarella balls and organic baby tomatoes and then topped with a good balsamic vinegar. Summer salads. Nothing is fresher to me then tossing produce that I have just found at the farmers market into a salad. Throw in a bunch of fresh herbs and it tastes like summer to me.

I love finding different varieties of tomatoes at the market from the baby yellow ones to the bigger heirloom tomatoes. We are lucky in Calgary to have quite a few farmers markets during the week in the summer as well as greenhouses here that supply tomatoes through the winter.

  8. Turn heat to low until ready to serve.

  12. Thinly slice and chop cucumbers.
  13. Chop up cilantro.
  14. Add vermicelli, lettuce, carrots and cucumbers to each individual bowl. This makes 2-3 servings.
  15. Add pork mixture to each bowl.
  16. Top each bowl with green onions, cilantro and chopped cashews.
  17. Serve and enjoy!

Ingredients
  

  • 1 cup ground pork (chicken or tofu would work too)
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 2 tsp fresh ginger, finely chopped
  • 1 cup cauliflower, finely chopped
  • 1/2 cup shredded carrots
  • 2 cups cremini mushrooms, finely chopped
  • 1/2 cup red pepper, chopped
  • 1/2 cup snap peas, chopped
  • SAUCE
  • 1/4 cup Swerve brown sugar
  • 1 tbsp lemongrass paste
  • 1 tbsp mild Chile oil
  • 1 tbsp rice vinegar

Bowl Deets

  • 1 pkg rice vermicelli
  • 1 cup shredded carrots
  • 1-2 cups chopped romaine lettuce
  • 1 cup sliced cucumber
  • 1/4 cup chopped green onion
  • 1/3 cup chopped cilantro or Thai basil
  • 1/4 cup chopped cashews or peanuts

Instructions
 

  • In a frying pan add the pork, onion, oil, garlic and ginger and cook on medium heat.

Every weekend I visit my local farmers market. I love seeing the abundance of fresh produce available to us here in Calgary.

I do try to buy local seasonal produce but truthfully we have long winters here so buying local is hard to do. That being said when I buy produce that is not in season here, I buy organic and feel I am doing my best to eat fresh and support others.

I find that when I bring home produce from the market it dictates what we will eat all week too, making meal planing easier.

Mexican Market Salad Recipe

Most of the time the meals that we have or the recipes that I share are based on what I see at the market. This week when I was at the Calgary Farmers Market I saw a container of salsa verde that was made fresh at the Cherry Pit.

That salsa was the foundation for this gluten free salad.

I encourage you to visit your local markets and get to know the people that have booths there. There really is nothing better then a local grown tomato I think.

Mexican Market Salad

Ingredients
  

  • Organic romaine lettuce, chopped
  • 1 small pkg organic ground beef(about 2 cups)
  • 1 tsp dried each oregano, Chile powder, cilantro, cumin
  • 1/2 cup jicama, sliced into matchsticks
  • 1/2 cup tiny tomatoes , cut in 1/2
  • 1/4 cup dill pickles, chopped
  • 1/4 cup black olives, chopped
  • Green onions, finely chopped
  • Shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup Salsa verde

Instructions
 

  • Cook beef and spices in a frying pan on medium heat until beef is cooked through.
  • Divide romaine lettuce into 2 bowls.
  • Top lettuce with cooked beef.
  • Add jicama, tomatoes, pickles, olives, green onions and cheese to each bowl.
  • In a small bowl stir the sour cream and salsa verde together.
  • Drizzle dressing over each salad.
  • Serve.
  • Enjoy!

Avocado and Grilled Corn Cobb Salad

Ingredients
  

  • 1 cup spiralized zucchini
  • 1 cup spiralized carrots
  • 1/2 head butter lettuce
  • 2 cobs of corn bbq’d
  • 2 hard boiled eggs, cut in 1/2
  • 2 chicken breasts, bbq’d and sliced
  • 1 cup baby tomatoes
  • 1 cup cucumbers, sliced
  • 1/2 avocado, sliced

Avocado Creme Dressing

  • 1/2 avocado
  • Juice from 1 lime
  • 1/2 cup plain greek yogurt
  • 1 tsp jalapeno, chopped
  • Pinch of salt

Olive Oil Dressing

  • 1/2 cup olive oil
  • 2 tsp red wine vinegar
  • 1 tbsp maple syrup
  • 1 tsp fresh lime juice

Instructions
 

  • Add all ingredients to a magic bullet or small food processor and blend well.
  • Pour into a small bowl.

Olive Oil Dressing

  • Add all ingredients to a small mason jar. Place the lid on and shake well to blend.

Salad Directions

  • To assemble salad first lay butter leaf lettuce onto a platter.
  • Place the other ingredients onto the platter, arranging the individual ingredients to fill the platter.
  • Pour 1/2 of the olive oil dressing on to the salad ingredients.
  • Serve the salad with the avocado creme and remainder of olive oil dressing on the side.

Hey everyone!

Sorry I have not posted a new recipe since July but I’ve been enjoying our gorgeous summer we have been having in Calgary since I got back from my trip to Toronto.

For everyone that has been following me on facebook you are aware that after recovering from a knee injury this winter I am back to walking a ton (20000 steps/day), have biked the Banff Legacy Trail a few times this summer and have been kayaking.

Normally hubby and I rent kayaks but a few weeks ago we took the plunge and bought 2 Delta Kayaks here in Calgary at Undercurrents.

Last weekend we took the kayaks out to Two Jack Lake for our first solo adventure. I was nervous for normally someone helps you into the water and out of the kayak at the end when you rent them but I think our trip was a success.

This summer has been full of activity and fun but I thought I’d better share a few new recipes with you since it has been awhile.

Right now in Calgary the markets have an abundance of fresh local corn and my favorite way to cook corn on the cob is to bbq it.

Its easy!

Drizzle the corn on the cob with a bit of olive oil, wrap it in aluminum foil and place in a medium heat bbq for 20-25 minutes.

That’s it.

Normally I bbq 4-6 cobs of corn so that I have leftover bbq corn in the fridge for salads.

This recipe for Avocado Grilled Corn Cobb Salad is a great way of enjoying the fresh veggies you can get at the farmers markets right now.

Fresh With Flavour Coleslaw

Fresh With Flavour Coleslaw

Ingredients
  

  • 2 cups thinly sliced matchstick sized carrot
  • 2 cups thinly sliced, shredded cabbage
  • 2 green onions, finely chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp sliced jalapeño (can reduce the amount depending on your spice preference)
  • 1 tbsp sliced red chile pepper (again, you can reduce the amount)
  • 2 tbsp fresh lime juice
  • 1/4 cup canola oil
  • 1 tbsp rice wine vinegar
  • 1 lime cut into wedges to serve

Instructions
 

  • In a small jar add the lime juice, canola oil and rice wine vinegar.
  • Place lid on jar and shake well.
  • In a medium bowl combine all the ingredients(from the matchstick carrots to the chile pepper).
  • Toss.
  • Add the dressing and toss to combine.
  • Serve the coleslaw on its own as a side salad or top it with cooked shrimp, bbq tenderloin, baked chicken or alongside ribs.
  • Enjoy!

I am a cabbage fan.

I will pretty much eat it anyway it is cooked or not cooked. Everything from creamy coleslaw to simply roasted to cabbage rolls. It is all good to me.

I am also a salad fan. I easily eat at least 2 salads a day, sometimes sticking to the same salad for lunch for a few days or constantly trying to switch it up.

But with coleslaw, truthfully it is almost always a creamy coleslaw for me. It is how my grandma used to make it and it is still my favourite.

I decided to play with a non creamy coleslaw recipe and I really liked the flavour so I thought I would share it with you.

The hardest part of making coleslaw is the shredding of ingredients you need to do and after that it is an easy one bowl assembly.

I added shrimp to my salad in the photo but you could easily serve this coleslaw with any meat-bbq pork loin, ribs, baked chicken,etc.

  • 3 cups watermelon, cut into squares
  • 4-5 mini cucumbers, sliced into squares
  • 1/3-1/2 cup feta cheese, crumbled (cow, sheet or goat feta)
  • 1/4 cup fresh mint, finely chopped
  • 1 lime
  • 2 tsp honey

Instructions
 

  • Lightly peel the mini cucumbers.

  • Baby Potatoes
  • Hard-Boiled Eggs
  • Celery
  • Dill Pickles
  • Fresh Dill

This easy gluten-free potato salad is simple to make, delicious and always a hit in the summer.

This creamy potato salad is one of those recipes that we have on repeat in the summer. We also love easy summer recipes like. Simple Caprese Salad, watermelon cucumber and lime salad and cantaloupe cucumber salad.

HOW TO MAKE THE POTATO SALAD:

  1. In a medium pot add the potatoes and cover potatoes with water.
  2. Bring to a boil and then turn down the heat to low-medium and cover with a lid.
  3. Cook 10-15 minutes depending on size of potatoes. You want the potatoes slightly tender.
  4. Drain potatoes and set aside.
  5. In a medium bowl add the mayo, mustard, dill pickle juice, whipping cream and apple cider vinegar. Stir well.
  6. Cut baby potatoes in half and add to bowl.
  7. Slice hard-boiled eggs in half and add to bowl.
  8. Add the celery, dill pickles and dill and toss all together.
  9. Add salt and pepper and salad is ready.
  10. Cover bowl and keep in refrigerator until ready to serve.

Ingredients
  

  • 12 – 14 baby potatoes
  • 6 hard boiled eggs
  • 1/2 cup diced celery
  • 1/4 cup diced dill pickles
  • 1 Tbsp fresh dill, finely chopped
  • 2 green onions, finely chopped
  • 1-2 tsp yellow mustard
  • 1 cup mayonnaise
  • 1 tbsp dill pickle juice
  • 1 tbsp whipping cream or coconut milk
  • 1/2 tbsp apple cider vinegar
  • Salt and pepper to taste

Instructions
 

  • In a medium pot add potatoes and cover potatoes with water.
  • Bring to boil and then turn down to low-medium heat and cover with a lid.
  • Cook 10-15 minutes. You want the potatoes to be slightly tender. Drain and cool potatoes.
  • In a bowl stir together the mayonnaise, mustard, dill pickle juice, whipping cream and apple cider vinegar.
  • Cut baby potatoes in 1/2 and add to a medium bowl.
  • Slice eggs in half and half again and add to bowl.
  • Add the celery, dill pickles and dill and toss all together.
  • Add salt and pepper and salad is ready to serve.
  • You can cover bowl and place in refrigerator to keep cold also.

I originally posted this recipe on the blog on Sept 2016. It was fun to take new photos ad this time I cut the cantaloupe and cucumbers into balls. I then placed it on the plate in a Tetris type style. Plating the cantaloupe and cucumber salad this way definitely gives it a bit of a wow factor, especially when entertaining. But you could easily just toss all the ingredients into bowl and serve it that way.

HOW TO MAKE THE SALAD:

  1. Use a melon baller to scoop balls out of the cantaloupe.
  2. Set balls aside.
  3. Lightly peel mini cucumbers.
  4. Cut cucumbers into squares the size of the balls. Trim corners of square cucumbers to resemble a ball shape.
  5. Set cucumbers aside.
  6. In a small bowl whisk the olive oil and lime juice together,

  8. Chop up 1/2 container of feta into crumbles. Set aside.

  • 1/2 Cantaloupe, cored
  • 5-6 mini cucumbers
  • 1/2 cup crumbled feta cheese, cow, goat or sheep
  • 1 lime, juice
  • 1/2 Tbsp olive oil
  • 1/4- 1/3 cup finely chopped fresh mint
  • Maldon sea salt
  • 1 tsp finely chopped red chile pepper Optional

Instructions
 

  • Use a melon baller to scoop balls out of cantaloupe. Set aside balls.
  • Lightly peel the cucumbers.
  • Cut cucumbers into square shapes the size of the melon balls.
  • Trim the corners of the cucumber squares to make them more ball shape. Set aside.
  • Slice the chili pepper into very thin slices.
  • Alternate melon balls and cucumber on a plate.
  • Whisk the lime juice and olive oil together.
  • Sprinkle the fresh mint, feta and chili slices over the melons and cucumbers.
  • Drizzle the lime juice/oil over the mixture.
  • Serve right away or chill in refrigerator for an hour.

Mexican Chicken and Corn Salad

It is grilling season in Calgary right now and I am using every opportunity to use my barbecue.

I love that grilling adds an extra flavour to meats but also makes cleaning up my kitchen very easy. No pots to wash at all-I love that!

I am always looking for ways to jazz up my normal BBQ chicken salad and this Mexican chicken and corn salad does the trick.

Grilling up the corn is a must for the charring on the corn kernels adds an extra flavour boost to the salad.

One of the other things I do when grilling chicken is to pound it thin. This makes for an even thickness and your chicken then barbecues up quickly.

You could easily make the dressing dairy free too by switching up the Greek yogurt for Tofutti vegan sour cream and also Tofutti vegan cream cheese. The rest of the ingredients are naturally gluten and dairy free which I like.

This recipe serves 2 as a main dish

Mexican Chicken and Corn Salad

Ingredients
  

  • 4-5 cups shredded iceberg lettuce
  • 2 corn cobs, husks and silks removed
  • 2 tbsp olive oil
  • 2 boneless chicken breasts
  • 1 avocado, sliced and sprinkled with lime juice
  • 2 limes (for dressing and avocado)
  • 1/2 cup fresh cilantro, chopped
  • 10-12 baby tomatoes, chopped
  • Dressing
  • 1/2 cup fresh cilantro, chopped
  • 1 tsp minced garlic
  • 2 tbsp olive oil
  • 1/2 cup plain Greek yogurt
  • 1/4 cup plain cream cheese
  • 2 tbsp fresh lime juice
  • 1/2 – 1 tsp jalapeño
  • 1 green onion, chopped

Instructions
 

  • Heat a gas barbecue to medium heat.
  • Place the corn cobs on a sheet of aluminum foil.
  • Pour 2 Tbsp olive oil over the cobs and then wrap them up with the foil.
  • Place in barbecue and grill for about 15 minutes, turning the cobs over at least once.
  • Remove from barbecue and cool.
  • Once cool enough to handle, cut kernels from the cobs.
  • Set aside. 
  • Place one chicken breast on a sheet of parchment paper.
  • Top with another sheet of parchment paper.
  • Use a meat mallet to pound the chicken breasts flat to about 1/2 inch thick.
  • Pour some olive oil on a cookie sheet.
  • Place flattened chicken breast on the cookie sheet.
  • Repeat flattening process with the other chicken breast.
  • Place flattened chicken breasts on the barbecue and grill for about 12-15 minutes on medium heat.
  • Flip breasts over and continue grilling for another 5 minutes.
  • Remove from barbecue and slice into strips.
  • Set aside.
  • For dressing put all ingredients into a mini food processor and a magic bullet and process until smooth.
  • Pour into a jar and set aside.
  • To assemble salad spread shredded lettuce in a large bowl or onto 2 individual plates.
  • Top lettuce with chicken strips, sliced avocado, corn kernels, cut up tomatoes and chopped cilantro.
  • Pour dressing over salad and serve.
  • Enjoy!

This past week I was sent a box of goodies that included gluten free Catelli pasta, a bottle of olive oil and a gift card to purchase extra ingredients.

I was not only happy to receive the box but the challenge to come up with a new pasta recipe to share with you. I knew I wanted to come up with a cold pasta salad recipe and also a quick and easy hot pasta meal recipe so I started playing in the kitchen with ingredients.

New recipe ideas come to me in a variety of ways and this cold pasta dish came when I was upgrading my MacBook Pro and downloading all my 15,000 photos on it. It takes a long time to upload that many photos so while I was sitting in the Apple Store waiting for this to happen I caught an old photo that I had taken 20 years ago in New Orleans.

When I thought about New Orleans I remember my husband and I stopping at a local vendor and ordering a Muffletta sandwich. This was pre-celiac days, and hubby and I had never had such a combination of flavours in a sandwich. Truly I had never had olives before either so it was quite an adventure for my palette.

With this thought in my head I decided to come up with my version of a Muffletta sandwich but this one would be a cold pasta salad version.

What is a Muffletta sandwich?

It is a sandwiched layered with a marinated olive salad, provolone and mozzarella cheese, salami, mortadella and ham. It is very good!

In my recipe instead of an olive salad I made a thick olive dressing and added shredded carrots, ham, salami, fresh mozzarella and chopped artichokes hearts to the cold pasta.

This salad would be great for a summer barbecue or put in small jars and taken along on a picnic.

Gluten Free Muffletta Pasta Salad

Ingredients
  

  • 1 Catelli gluten free penne (cook pasta according to instructions on box)
  • Dressing
  • 1/2 cup pitted green olives
  • 2 tbsp pitted black olives
  • 1/4 cup sundried tomatoes in olive oil
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 tsp minced garlic
  • 1/4 cup fresh parsley
  • 1 tbsp peperoncini peppers
  • 1/2 tbsp capers (optional)
  • 1/4 cup shredded carrots
  • 1/4 cup chopped celery
  • 1/2 cup deli ham, chopped
  • 1/2 cup salami, chopped
  • 1/2 cup fresh mozzarella, cut up into small pieces
  • 1 can artichoke hearts, drained and chopped

Instructions
 

  • Cook pasta according to directions on box, drain and place pasta on an oil lined cookie sheet to cool.
  • In a food processor add all dressing ingredients and process until everything is minced.
  • In a large bowl add the cooled pasta and the dressing.
  • Toss well.
  • Add the rest of the ingredients (carrots to artichoke hearts) and toss well.
  • Chill the pasta in the refrigerator until ready to serve.
