Butter Tarts.

You either love them or you don’t. For most people it has to do with the raisins.

For me, if I am going to go through all the work of making gluten free tart shells and then making the filling I am going with raisins. It just doesn’t seem to fit without them. However I love the filling and crust of a butter tart so I thought why cannot I make 8×8 square pan with just the filling and crust?

So I did!

gluten free butter tarts recipe

Now do not worry you are not going to have to make a gluten free crust, not in the traditional way anyhow.

This is a 2 step process where you will make a shortbread like layer, bake it for 10 minutes and then top with the filling and bake again.

The hardest part is waiting for the bars to cool completely before you can cut them.

A gluten and dairy-free banana bread that is super moist.

It always seems the I will have 2 bananas that get forgotten and start to get too ripe. I will throw them whole into the freezer if I do not have time to make a banana bread that day. On baking day I remove 3 frozen bananas and let them unthaw for 5-7 minutes. The peel is then easy to remove and you can add them to the batter.

Do you freeze ripe bananas too?

Gluten-Free Dairy-Free Banana Chocolate Chip Pancakes

gluten free dairy free banana chocolate pancakes recipe
gluten free dairy free banana chocolate pancakes recipe

I was in the kitchen all day long today working on recipes for Amber Approved magazine and for a blogger pasta contest using Catelli gluten free pasta.
I enjoy challenging myself to come up with healthy lunch ideas or a spring time salad using all kinds of citrus fruits.

Playing in the kitchen and coming up with recipes exhilarates me. It fills me with energy to have many cutting boards out, chopping a variety of fruits, veggies and herbs as well as my stand mixer beating a gluten and dairy free dough in the background.
It can look like chaos but in the end four new recipes have been developed and photographed.
While in the midst of this chopping and stirring I thought of pancakes.
Yes, pancakes.
I knew I had a banana in the freezer and decided I would make banana chocolate chip pancakes.
You will be happy I did for I am sharing the new recipe with you.
This recipe is gluten free and dairy free but you can switch to cow milk if you want.

This recipe made about 15 medium pancakes.

These gluten-free and dairy-free banana chocolate chip pancakes are the perfect breakfast for the family. I love to make a big stack of these pancakes on the weekend for brunch.

Gluten Free Dairy Free Banana Chocolate Chip Pancakes

Ingredients

  • 1 ripe banana or I like to freeze bananas and then let them unthaw for 5 minutes before using
  • 1 2/3 cup goat milk
  • 1 large egg
  • 1 tbsp sugar
  • 2 tsp gluten free baking powder
  • 1 1/4 cup GF flour blend (I like to use Compliments gluten free flour blend available at Sobeys and Safeway)
  • 1/2 cup Enjoy Life mini chocolate chips

Instructions

  • In a large bowl use a stand mixer to beat the banana.
  • Add the egg and sugar and beat until smooth.
  • Add the goat milk and the baking powder and continue beating.
  • Add the gluten free flour and beat until you have a smooth batter.
  • Fold in the chocolate chips.
  • Coat a non stick frying pan with coconut cooking spray and heat pan on low-medium.
  • Pour a dollop of batter on the frying pan and lightly spread out into a circle shape.
  • Cook for about 2-3 minutes and flip pancakes.
  • Cook a couple minutes more.
  • Enjoy!

Raw Vegan Chocolate Pudding

gluten free raw vegan chocolate pudding recipe

Recently I decided to try my hand at raw desserts.
Why you ask?
No particular reason other than challenging myself to try new things.
I also think everyone should have dessert, don’t you agree?
I cannot believe how easy this chocolate pudding recipe is and I really was not expecting how versatile raw, soaked cashews are.
I was able to make a vegan raspberry cheesecake too and cannot wait to share that recipe with you all in the next few weeks.

gluten free raw vegan raspberry cheesecake recipe
It too was easy to make and more importantly tasted amazing!!
Whether for dietary, humane or just a personal reason your vegan guests should also be able to enjoy dessert.
I will definitely make this again and hope you give it a try too.
The most important ingredient in this pudding is cashews! No, not the roasted, salted ones you find in cans in the grocery store.
You need to find raw cashews.
I am able to find them at any of many health food grocery stores we have here in Calgary. The second important step is to soak the cashews overnight. This is why they become so creamy.
Basically you place raw cashews in a bowl.
Cover the cashews in water and let sit on the counter overnight.
In the morning all you need to do is drain them.
Process in a food processor and you have the beginning of creaminess without diary!

Raw Vegan Chocolate Pudding

Ingredients

  • 1 1/2 cups soaked raw cashews
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1/2 cup raw cacao powder
  • 1/2 cup coconut milk

Instructions

  • Place soaked cashews, honey, coconut oil and cacao powder in a food processor.
  • Process until well combined.
  • Add the coconut milk and process until mixture looks like a pudding.
  • Pour into small jars or bowls and place in the fridge.
  • You can also enjoy these right away if you want.
  • I topped mine with some whipped coconut milk and fresh raspberries.
  • Enjoy!
