The weather here in Calgary has been very dreary. We’ve been waking up to fog every morning, fog so thick I can’t even see the house across the street. And it has been cold, we are sweater weather all over again.
We are used to sunny blue skies here in Calgary even when the ground is covered in snow, so fog and consistent rain doesn’t make us too happy here.

This however is a great time to turn the furnace up, light a fire, put on your favorite sweater and adding warm smells of spice and vanilla in the kitchen. My house has had a lot of company lately. No friends, family or extended relatives.
Usually during the day I’m alone. The hubby goes to work, and my youngest son goes off to university. However, he just finished his exams and his summer job has yet to start. The hubby has been taking a few days off here and there to work on house projects and getting his mustang ready for car shows. So I’ve enjoyed the busyness of the house and one of my favorite things to do for my family is to make a large breakfast. I usually do the traditional bacon and eggs but with this gloomy weather I felt like making some yummy waffles.
You’ll notice I have a few recipes for gluten free waffles and pancakes on my blog.

There’s something about pancakes and waffles that makes me feel like a warm blanket is on my shoulders, like I’m getting a hug from my grandma, like I’m making pancakes again for my little kids. I just like pancakes and waffles! Can’t you tell? ????
So, how do you switch up waffles and make them more interesting? You add innovative ingredients and toppings! Like peanut butter and jam! Now imagine a warm waffle topped with creamy peanut butter filing and hot strawberry jam on top…. Yep! You want one don’t you?
My recipe for my gluten free buttermilk waffles is already on my blog (link above), but I’ve added ground pecans and some warm strawberry jam to the batter.
Note: before you get started * – To make these PB & J Waffles, make the peanut butter cream first, then waffles and strawberry jam topping.

Gluten Free PB & J Waffles

Ingredients
  

  • 3/4 cup potato starch
  • 1/2 cup brown rice flour
  • 1/4 cup tapioca starch
  • 1 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 tsp salt
  • 1/3 tsp xanthan gum
  • 3 eggs
  • 2 tbsp canola oil
  • 1 cup buttermilk

Instructions
 

  • Adding 1/3 cup ground pecans & 1/4 cup strawberry jam(Heated up in microwave for 30 seconds).
  • In a large bowl add all dry ingredients, whisking well to incorporate.
  • Add ground pecans and stir again.
  • Add buttermilk, eggs and oil and whisk, beating until a smooth batter is formed.
  • Once smooth, add in strawberry jam and stir.
  • Let batter rest for 5 minutes.

Peanut Butter Cream

Ingredients
  

  • 1/3 cup smooth peanut butter
  • 3 tbsp white sugar
  • 1/4 cup milk
  • 1 cup whipping cream

Instructions
 

  • In a small saucepan, heating over low-medium heat add peanut butter, sugar and milk.
  • Whisk well.
  • Stirring constantly let mixture cook for a couple of minutes.
  • Your really just heating until mixture is smooth.
  • Remove from heat and let cool for 5-10 minutes
  • Once cooled, whip cream for 5 minutes until peaks form.
  • Fold whipped cream into peanut butter mixture.
  • You’ve now made peanut butter cream.
  • It can be stored in refrigerator until ready to use.

Strawberry Jam Topping

Instructions
 

  • Heat up 1 cup strawberry jam in a microwave for 1 minute.
  • Stir well until jam is smooth.
  • Serve warm when waffles are ready.
  • To assemble waffles
  • Spread a little bit of warm strawberry jam on plate.
  • Place a hot waffle on jam.
  • Top hot waffle with peanut butter cream.
  • Place another waffle on top, a little more peanut butter cream and then pour some hot strawberry jam topping over.
  • Enjoy!

Gluten Free Chocolate and Peanut Butter Oatmeal

Gluten Free Chocolate and Peanut Butter Oatmeal

Ingredients
  

  • 2/3 cup Quaker gluten free quick cooking oats
  • 1 1/3 cup Silk dark chocolate almond milk
  • 1 tbsp peanut butter
  • 1/2 banana
  • Chia seeds
  • Hemps seeds

Instructions
 

  • In a saucepan heat the dark chocolate almond milk on medium/high heat until near boil.
  • Add the gluten free quick oats and stir.
  • Turn heat down to medium.
  • Add the peanut butter to the oats and stir well.
  • Cook on medium heat for 2 minutes.
  • Remove from heat and pour into 2 small bowls.
  • Top each bowl with sliced banana, hemp and chia seeds.
  • Add the peanut butter and continue stirring for a minute.

This week I received a box full of Quaker gluten free goodies.

It is always a treat for me to get mail such as this and the opportunity to try new gluten free products that are in the market now. I had not tried the quick cooking oats or the Maple and Brown Sugar Instant Oatmeal yet.

I am very familiar with Quaker Crispy Minis and in fact today took a bag along on our kayaking trip down the Bow River. There are so many flavour varieties and I cannot say which is my favourite.

The Quaker quick cooking oats is one of their newest products and I came up with a quick and easy gluten free oatmeal recipe that I think your kids will love.

A quick and delicious breakfast meal can be challenging to make especially on school days but this new recipe is sure to please. Really I think you can get this hot breakfast oatmeal on the table in 5 minutes. Yes, 5 minutes!

Let me tell you a few things about the Quaker gluten free oatmeal products. They are produced in a Gluten Free Certified facility and are labelled with the Canadian Celiac Association stamp of approval.

While oats are naturally gluten free, in the milling, storage and transportation part of their journey they can come into contact with wheat, rye or barley. Quaker makes sure that their oats are milled to be safe and are ensured to be gluten free.

This year I turned 50.
Yikes, it is still hard to believe I am actually that old.
I am trying to embrace this age but also push through it and push myself too. I have been challenging myself to not be afraid, to try new things and be more adventurous.
Even though I was scared to death I tried a helicopter ride in Kauai and found out it really wasn’t as scary as I thought it would be. In July, I pushed past the fear of not being able to complete a hike up the mountain to being able to finish it in record speed.
I do think I can talk myself easily out of NOT doing things rather than trying it first.
Maybe it comes from living most of my life with being heavy. It wasn’t a case of over eating either. It comes from my genetic background and a low thyroid that has battled me for over 25 years.
I am trying to win the battle with weight loss even though it is dog gone slow process. But I am determined to exercise myself to being the healthiest I can be. It isn’t about being a size 0, that my friends will never be in my cards but I want to be a healthy 50 year old.
If you have been following me for a bit you will see a few different photos of me on my sites. That is because I have a professional photo of myself before I started to lose weight and then just a shot I took of myself half way through my weight loss journey.
In July I asked Lori from 10centstudio to take some new headshots for me, and even though I was incredibly nervous I pushed myself to just go and do it.
Of course, anyone who knows me know I cannot show up empty handed so I baked a peanut butter bundt cake with chocolate ganache and brought the whole cake for her to the studio.

Lori was surprised but delighted in the cake and I heard from her later in the day that many slices of cake were ate and enjoyed.
That made me very happy to hear.

Gluten Free and Dairy Free Peanut Butter Cake

Feel free to change the dairy free ingredients to full-on cow milk ones if you do not have any dairy issues.

Ingredients
  

  • 1/2 cup chopped unsalted peanuts
  • 2 cups gluten free flour blend (I like to use Compliments gluten free flour blend available at Safeway and Sobeys)
  • 2 1/2 tsp gluten free baking powder
  • 1/4 tsp salt
  • 1 cup white sugar
  • 1/2 cup Earth Balance vegan “butter” softened
  • 3/4 cup creamy peanut butter
  • 1 tsp gluten free vanilla
  • 3 large eggs
  • 2/3 cup  goat milk

Chocolate Ganache:

  • 1/2 tsp Enjoy Life chocolate chips
  • 2 tsp coconut oil

Instructions
 

  • Preheat oven to 325 degrees.
  • Grease and flour a bundt pan.
  • Sprinkle the peanuts in bottom of pan.
  • In a standing mixer cream the vegan “butter” and the peanut butter until smooth.
  • Add the eggs, then goat milk and vanilla and beat again until smooth.
  • In a small bowl whisk the gluten free flour, sugar, baking powder and salt.
  • Add dry ingredients and beat again until smooth.
  • Spread cake batter into bundt pan.
  • Bake for about 55-60 minutes or until a toothpick inserted in center comes out clean.
  • Remove from oven and cool on a cooling rack for about 15 minutes.
  • Invert pan and remove cake and let it continue cooling on rack for another hour.
  • Once cake is cool make chocolate ganache.
  • In a small saucepan on low heat add the chocolate chips and coconut oil.
  • Stir until all is melted.
  • Pour ganache over cake.

Gluten Free Reece’s Chocolate Peanut Butter Cake

When I was in the grocery store the other day I saw a new product on the shelf and decided to take a look at it.
Was surprised to see Reece’s had a chocolate peanut butter spread out that was gluten free.
When I posted my find on Facebook I found most folks were excited to see what kind of new recipe I would come up with.
There were a few folks that were not happy to see a processed item being talked about but as I have stated before on my site I believe it’s okay to enjoy treats occasionally. We eat mainly fruits, veggies and meats in our house but because I love baking so much there can be cakes and cookies in the kitchen also.
If you ask my family they will tell you that we might have one cookie or one slice of cake but I normally give most of the baked goods away.
I wanted to come up with a simple one-layer square cake. An easy recipe to make and enjoy with or without icing.

Reece’s Chocolate Peanut Butter Cake

Ingredients
  

  • 1/2 cup Reece’s Chocolate Peanut Butter Spread
  • 1/4 cup Earth Balance vegan “butter”, softened
  • 1/2 tbsp apple cider vinegar
  • 1-1 1/4 cup cup goat milk
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tsp gluten free baking powder
  • 1/2 tsp salt
  • 1 1/2 cups gluten free flour blend (I like to use Compliments gluten free flour blend that is available at Safeway and Sobeys)

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a square baking pan with parchment paper.
  • In a small bowl mix the apple cider vinegar with the goat milk.
  • In a medium bowl whisk the baking powder, salt and gluten free flour blend.
  • In a stand mixer beat the vegan “butter”, chocolate peanut butter spread with the brown sugar.
  • Add the eggs and continue beating, scraping sides of bowl.
  • Alternately add the goat milk and the dry ingredients to the batter and beat until smooth.
  • Pour batter into lined square baking pan.
  • Bake in oven for 30-35 minutes.
  • Remove and cool.
  • Enjoy!

These gluten-free peanut butter and jam cookies combine a soft pb cookie, crushed peanuts and a sweet jam filling. A cookie that you can enjoy for breakfast with your morning coffee. They are a great afternoon treat, or grab-and-go snack too. The PB and Jam cookies are dairy-free because I used vegan butter and a bit of coconut milk.

HOW TO MAKE THE PB COOKIES:

  1. In a stand mixer (or use a medium bowl and hand mixer) beat the vegan butter, peanut butter and sugar.
  2. Scrape sides of bowl and mix again until creamy.
  3. Add the egg and coconut milk and mix again on medium speed.
  4. Add the gluten-free flour, baking soda and salt and mix on low speed.
  5. Increase speed to medium and mix for a couple minutes until batter is smooth.
  6. Place dough in the refrigerator and let it chill for an hour.
  7. Preheat oven to 350 degrees.
  8. Line 2 cookie sheets with parchment paper or silpats.
  9. Remove dough from fridge.
  10. Use an ice cream scoop to drop dough onto cookie sheet.
  11. Use your finger or a small spoon to make an indent in each cookie.
  12. Sprinkle each cookie with chopped peanuts.
  13. Fill each indentation with jam.
  14. Bake in oven for 10-11 minutes.
  15. Remove and cool.

Ingredients
  

  • 1/2 cup vegan butter
  • 1/2 cup unsweetened peanut butter
  • 3/4 cup white sugar (or 1/2 cup Truvia sweetener)
  • 1 1/2 cups gluten free flour blend (1 to 1)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 large egg
  • 1 tbsp coconut milk
  • 1/4 cup finely chopped raw peanuts
  • 1/3 cup jam

Instructions
 

  • In a stand mixer beat the vegan butter with the peanut butter and the sugar.
  • Scrape sides of bowl and mix again until creamy.
  • Add in the egg and coconut milk and mix on medium speed.
  • Mix on low and add the gluten free flour blend, salt and baking soda.
  • Increase speed to medium and mix until creamy.
  • Place dough in refrigerator and chill for an hour.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Use a medium ice cream scoop to drop dough onto cookie sheet.
  • Use your finger or a small spoon to make an indent in each cookie.
  • Sprinkle chopepd peanuts onto each cookie.
  • Fill each indentation with jam.
  • Bake in oven for 10-11 minutes.
  • Remove from oven and cool.
  • Enjoy!

Gluten Free Oatmeal PB Marshmallow Sandwich Cookies

Wow, that is a mouthful right?
I have a hard time coming up with names for my cookies sometimes.
For instance I could have called them Oatmeal Sandwich Cookies, but then I would have left out that they were gluten free, also that they have peanut butter in them or that they gooey marshmallow in between 2 cookies, thus making them sandwiches.
See?
What do I do?
I will certainly say that they are delicious! Well worth making. Feel free to change the peanut butter to almond butter, or even pea butter if you have an allergy in the house.

This recipe is really 2 steps.
Make and bake the oatmeal cookies, then let them cool completely before smearing marshmallow fluff in the middle of the cookies.

Gluten Free Oatmeal PB Marshmallow Sandwich Cookies

This recipe makes about 12 sandwiches or 24 cookies.

Ingredients
  

  • 3/4 cup gluten free flour blend (I use Compliments gluten free flour blend)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup Earth Balance vegan “butter”
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup  peanut butter
  • 1 large egg
  • 1 tsp gluten free vanilla
  • 1 cup non-contaminated oats
  • 1 jar of marshmallow fluff

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a stand mixer beat the vegan “butter” with the peanut butter.
  • Add the white and brown sugar and beat until fluffy.
  • Add the large egg and vanilla and beat again.
  • Scraping sides of bowl to incorporate all well.
  • In a small bowl whisk the gluten free flour blend, salt, baking soda and baking powder.
  • Add the flour mixture plus the oats to the wet ingredients.
  • Mix until combined.
  • Drop dough onto cookie sheet.
  • I like to use an ice cream scoop to scoop out cookie dough.
  • This way all the cookies are the same size.
  • Bake in oven for 8-10 minutes.
  • Let cool completely.
  • Once cool add about a tsp of marshmallow fluff to flat side of a cookie. Top with another cookie to make a sandwich.
  • Enjoy!
