Double Chocolate Marshmallow Brownies

Ingredients
  

  • 1/2 cup softened butter or a vegan alternative like Earth Balance
  • 1 cup white sugar
  • 4 tbsp good quality dark cocoa
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup gluten free flour (I used Compliments gluten free flour blend or you could also use Bob’s Red Mill 1 to 1 gluten free flour blend)
  • 1 jar Marshmallow creme/fluff (you won’t use the whole jar but you cannot find it in a smaller size)
  • 1/2 cup creamy peanut butter
  • 1 cup Enjoy Life dark chocolate chips
  • 1 1/2 cups gluten free Rick Krispies

Instructions
 

  • Preheat the oven to 350 degrees.
  • Line a 8×8 square pan with parchment paper.
  • In a stand mixer add the softened butter and sugar and mix.
  • Add the salt and cocoa and mix again.
  • Scraping sides of bowl to incorporate.
  • Add the eggs and beat on medium speed.
  • Scrape side of bowl and mix again on medium speed.
  • Add gluten free flour and mix on low speed until blended.
  • Spread the batter into the parchment lined pan.
  • Bake in over for 20-25 minutes.
  • Remove from oven and cool.
  • Once cool spread about half the marshmallow creme over the cooled brownies
  • .In a small saucepan add the peanut butter and chocolate chips and melt on low heat.
  • Stirring well.
  • Once all is melted and combined remove from heat.
  • Add the gluten free Rice Krispies.
  • Spread the chocolate krispie mixture over the marshmallow layer.
  • Cool the Brownies in the refrigerator.
  • Once cool, cut into square and enjoy!

After posting a healthy salad recipe I had to share a decadent holiday dessert.

This is a recipe for a 3 layer brownie.

First layer is a baked chocolate brownie then topped with marshmallow creme and then finally a crunchy chocolate/ peanut butter layer.

Sound good, right?

I was going through old family recipes and found this recipe called Crunch Brownies.
It had no name on it so I have no idea who wrote the original recipe but I did change quite a few things to make it gluten free.

Give the recipe a try and please let me know what you think. I am sure you will love it!!
While I used butter in this recipe you could easily use Earth Balance vegan butter and the recipe would be dairy free too.

Ingredients
  

  • 3 tbsp butter
  • 1/2 cup peanut butter
  • 1 pkg (250g) marshmallows
  • 2 cups Natures Path gluten free honey cornflakes
  • 2 cups gluten free Rice Chex cereal
  • 1 cup Presidents Choice gluten free Pretzel Bites

Instructions
 

  • In a medium saucepan melt butter and marshmallows on low heat.
  • Stirring often until all is melted.
  • Add peanut butter and stir until smooth.
  • Remove from heat.
  • In a large bowl mix the cornflakes, Chex cereal and pretzel bites.
  • Pour the marshmallow mixture over and stir quickly.
  • Pour marshmallow mixture into a 8 x8 parchment lined baking pan and spread mixture evenly.
  • Let sit and then enjoy!

Chex Marshmallow Bars Recipe

We have had very little hot weather this summer in Calgary no in fact it was quite cool and rainy most of the time. On the rare hot day we have had I knew I wanted to bake but did not want to turn the oven on.

What to do?

Well, of course that means making something on the stove and usually for me that means marshmallows.

Instead of the standard Rice Krispie square, which truthfully there is nothing wrong with, I thought I’d throw a variety of other gluten free goodies into the bowl and see how it turned out.

Well, it turned out great so I am sharing my mixture with you.

Gluten free pretzel Bites.

Wow, that is a mouthful right?
I have a hard time coming up with names for my cookies sometimes.
For instance I could have called them Oatmeal Sandwich Cookies, but then I would have left out that they were gluten free, also that they have peanut butter in them or that they gooey marshmallow in between 2 cookies, thus making them sandwiches.
See?
What do I do?
I will certainly say that they are delicious! Well worth making. Feel free to change the peanut butter to almond butter, or even pea butter if you have an allergy in the house.

This recipe is really 2 steps.
Make and bake the oatmeal cookies, then let them cool completely before smearing marshmallow fluff in the middle of the cookies.

Gluten Free Oatmeal PB Marshmallow Sandwich Cookies

This recipe makes about 12 sandwiches or 24 cookies.

Ingredients
  

  • 3/4 cup gluten free flour blend (I use Compliments gluten free flour blend)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup Earth Balance vegan “butter”
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup  peanut butter
  • 1 large egg
  • 1 tsp gluten free vanilla
  • 1 cup non-contaminated oats
  • 1 jar of marshmallow fluff

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a stand mixer beat the vegan “butter” with the peanut butter.
  • Add the white and brown sugar and beat until fluffy.
  • Add the large egg and vanilla and beat again.
  • Scraping sides of bowl to incorporate all well.
  • In a small bowl whisk the gluten free flour blend, salt, baking soda and baking powder.
  • Add the flour mixture plus the oats to the wet ingredients.
  • Mix until combined.
  • Drop dough onto cookie sheet.
  • I like to use an ice cream scoop to scoop out cookie dough.
  • This way all the cookies are the same size.
  • Bake in oven for 8-10 minutes.
  • Let cool completely.
  • Once cool add about a tsp of marshmallow fluff to flat side of a cookie. Top with another cookie to make a sandwich.
  • Enjoy!

Gluten Free Chocolate Marshmallow Cashew Cookies

This recipe is gluten free and dairy free. It makes approximately 24 cookies.

Ingredients
  

  • 1/2 cup Enjoy Life chocolate chips
  • 1/2 cup Earth Balance vegan “butter”
  • 2 tbsp  cocoa powder
  • 2 large eggs
  • 1 cup white sugar
  • 1 tsp gluten free vanilla
  • 1 tsp baking powder
  • 1 12 cups gluten free flour blend (I use Compliments gluten free flour)
  • 1/4 tsp salt
  • 1/2 cup toasted cashews
  • 1/2 cup dried cherries
  • 1/2 cup gluten and dairy free dark chocolate chips
  • 3-4 mini marshmallows/cookie

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Microwave 1/2 cup chocolate chips on high for a minute until chips are melted.
  • In a stand mixer beat the vegan “butter with the sugar until mixture is creamy.
  • Add the eggs and beat again, scraping bowl to combine.
  • Add the melted chocolate and the vanilla and mix again.
  • In a small bowl whisk the gluten free flour, cocoa powder, baking powder and salt.
  • Add dry ingredients to wet and beat again for a minute.
  • Add the cashews, cherries and chocolate chips and mix.
  • Drop dough onto lined cookie sheet and top each cookie with 3-4 marshmallows.
  • Bake in oven for 10-12 minutes.
  • Remove from oven and let cool.
  • Enjoy!
