  • Preheat oven to 350 degrees.
  • Line a muffin pan with paper liners. This makes 8 muffins.
  • In a food processor add the pb, swerve, milk and egg whites.
  • Process until smooth.
  • Add the rest of the ingredients except chocolate chips and process until smooth.

Keto Mini Peppermint Patties

Ingredients
  

  • 2 tbsp softened butter
  • 1/2 pkg (125g) cream cheese
  • 1/4 – 1/3 cup Swerve icing sugar sweetener
  • 1 tsp peppermint extract
  • 1 1/2 cups stevia baking chocolate or unsweetened chocolate
  • 1 1/2 tsp coconut oil

Instructions
 

  • In a small bowl add butter and cream cheese and use a hand mixer to beat welly
  • Add icing sugar and peppermint extract and beat well until smooth.
  • Melt chocolate with coconut oil.
  • Use a silicon mini cupcake pan for the peppermints.
  • Add about a tsp of melted chocolate to 12 cups.
  • Use the spoon to spread chocolate up a bit of the sides of cups.
  • Place in freezer for 10 minutes.
  • Scoop about a tsp of peppermint mixture into each cup.
  • Lightly press so it’s smooth.
  • Top with melted chocolate just until peppermint is covered.
  • Place back in freezer for 15 minutes.
  • Pop out and place in a container.
  • Repeat until all used.
  • Store in fridge.
  • Enjoy

If you do not know what they are you are missing out on a classic chocolate bar. It has a coconut filling and is then wrapped in chocolate.

This keto bounty bar is super easy to make also. I used a silicone pan as a mold for these bars. All you really need for this recipe is room in your freezer for the pan.

I added freeze dried raspberries as well as crushed blue butterfly flowerson my bars. It added an extra touch.

Ingredients
  

  • 2 cups unsweetened coconut
  • 2/3 cup whipping cream
  • 1 tsp vanilla extra
  • 2 cups stevia chocolate chips or unsweetened chocolate
  • 1 tsp coconut oil
  • Optional – crushed freeze dried raspberries and blue butterfly pea flowers

Instructions
 

  • In a small bowl combined the shredded coconut, whipping cream and vanilla.
  • Mix well.
  • Spoon into a silicone bar mold.
  • This made 12 for me.
  • Press mixture into each mold firmly.
  • Freeze for 1-2 hours.
  • In a saucepan melt the chocolate and the coconut oil.
  • Stir until smooth.
  • Remove bars from the silicone mold and place on a metal rack with parchment underneath.
  • Drizzle melted chocolate over each bar, covering well.
  • Sprinkle crushed raspberries and pea flowers on each bar.
  • Place back in freezer for 5 minutes.
  • They are ready.
  • Keep in fridge.
  • Enjoy!

Ingredients
  

  • 1 cup finely ground almond flour
  • 1/4 cup coconut flour
  • 2 tsp gelatin powder
  • 1/4 cup Swerve sweetener
  • 2 large eggs
  • 1/2 tsp each baking powder and baking soda
  • 1/4 cup softened butter
  • 1/3 cup Stevia chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper or a silpat.
  • In a stand mixer add the softened butter, swerve and eggs and beat well.
  • Scraping sides of bowl to incorporate all.
  • Add the rest of the ingredients except the chocolate chips and mix well.
  • Fold in the chocolate chips.
  • Place batter in the fridge for at least 30 min to set up.
  • Remove and use a small/mini ice cream scoop to drop batter onto cookie sheet.
  • Roll each ball in your hands to smooth.
  • Use a fork to lightly press cookie dough down.
  • Optional you can sprinkle a bit of Maldon sea salt on each cookie before baking.
  • Bake for 10 min.

I have been working on more low carb and keto recipes the last few months.

With getting older I have been trying to eat healthier and that means cutting back on carbs and sugar if I can. And you all know I love to bake so I decided to work on low carb and keto recipes now too.

While ALL my recipes are always gluten-free, my future recipes will have low-sugar options now too.

Such as this keto vanilla cheesecake mousse.

It is creamy and oh so rich in texture.

Keto Vanilla Cheesecake Mousse

Ingredients
  

  • 1 cup milk
  • 1/2 + 2 tsp gelatin
  • 1 cup whipping cream
  • 1/3 cup Swerve sweetener
  • 1 tsp vanilla paste
  • 1 250g cream cheese

Instructions
 

  • In a saucepan add the milk and gelatin and whisk on medium heat until gelatin dissolves.
  • Remove from heat and allow to cool for at least 20 minutes.
  • In a food processor add the cream cheese and swerve sweetener and process until smooth.
  • Add the whipping cream and vanilla and process until it is smooth and creamy.
  • Process for a couple of minutes.
  • Add the milk/gelatin mixture and process until well mixed.
  • Pour mixture into small canning jars or a medium bowl.
  • Place in refrigerator and set for at least an hour.
  • Enjoy!

Anyone who really knows me knows I love to bake.

It comes from spending most of my childhood at my grandma’s house and experiencing dessert at every meal. Yes, even breakfast had a dessert.

Freshly baked cinnamon rolls, homemade bread, cookies, etc.

It was all made with grandmas love and when I bake it makes me feel closer to her.

But in getting older I am trying to cut back on the sugar in my baking for its better for our health- and waistline.

More and more recipes that will be shared here will be low carb and keto BUT will always be gluten free and I think DELICIOUS!

Keto Pumpkin Roll

On my blog I have a recipe for Pumpkin Roll but I wanted to make a lower carb version that would be as good as my original one.

My original recipe for Pumpkin Roll is a winner and I highly recommend you make that pumpkin dessert for your family, but if you are wanting a lower carb version I hope you give this recipe a try.

Keto Pumpkin Roll

Ingredients
  

  • 1 cup finely ground almond flour
  • 1 tbsp coconut flour
  • 1/4 cup psyllium husks
  • 1/2 tsp baking powder
  • 1/2 cup Swerve brown sugar sweetener
  • 1 tsp each cinnamon, ginger and cardamom
  • 1/2 tsp each cloves and nutmeg
  • 2 large eggs
  • 3 tbsp melted coconut oil
  • 1/2 cup canned pure pumpkin
  • 1/2 cup cream
  • 1/4 cup boiling water
  • 3-4 cups whipping cream
  • 1/4 cup Swerve sweetener

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • In a medium bowl add the dry ingredients and mix with a hand mixer.
  • Add the eggs, melted coconut oil, pumpkin and cream and beat well.
  • Let sit 2 minutes.
  • Add boiling water and beat well for a couple minutes.
  • Use a spatula to spread batter on the cookie sheet.
  • Bake for 11-13 minutes.
  • Remove and cool for 5 minutes.
  • Beat the whipping cream until soft peaks, add the sweetener and beat again for a minute.
  • Remove the roll from the cookie sheet, leaving it on the parchment paper.
  • Spread whipping cream on the roll.
  • Roll up.
  • Place on a serving plate and then spread cream all over the roll.
  • Serve or place in refrigerator for an hour.
  • Enjoy!

Keto Pretzels

Keto Pretzel Recipe

I love to bake. Always have.

But as I get older, I have been working on recipes that are lower in carbs, lower in sugar and just a bit healthier when I can.

That is why I decided to try fathead dough.

What is it?

Well, it is a dough made by heating up shredded mozzarella and cream cheese, stirring it and adding a few other ingredients. It is a dough used a lot in Keto baking so I thought I would try it.

Thus the new recipe for Keto Pretzels.

The dough comes together fast and I found it easy to use.

The dough also rises really well in the oven.

Keto Pretzels

Ingredients
  

  • 2 cups finely ground almond flour
  • 3 tbsp psyllium husks
  • 1 tbsp gluten free baking powder
  • 2 large eggs
  • 3 cups grated mozzarella cheese
  • 5 tbsp cream cheese
  • 3 tbsp boiling water
  • Egg white wash

Instructions
 

  • Preheat oven to 400 degrees.
  • Line a cookie sheet with parchment paper.
  • In a medium bowl add the almond flour, psyllium and baking powder and stir.
  • In a microwaveable bowl add the mozzarella and cream cheese and microwave for 90 seconds.
  • Stir the mixture and microwave for another minute.
  • Stir this very well.
  • Add the eggs and the cheese mixture to the dry ingredients and mix for a few minutes.
  • Add the boiling water and mix again until it forms a dough.
  • Place a piece of parchment paper on countertop.
  • Divide dough into 6-8 pieces and then take one piece and roll it into a long log on the parchment paper.
  • Fold into the shape of a pretzel and place on lined cookie sheet.
  • Repeat rolling and shaping each piece of dough.
  • Brush each pretzel with a bit of egg wash.
  • Sprinkle sea salt on each pretzel.
  • Bake in oven for 13-15 minutes.
  • Remove and enjoy!
