Gluten Free Gingerbread Sheet Cake

Ingredients
  

  • 2/3 cup butter, softened
  • 1/2 cup Swerve sweetener
  • 1/2 cup organic molasses
  • 1 large egg
  • 1/2 tsp cloves
  • 1 tsp each cinnamon, ginger and cardamon
  • 1/2 tsp baking soda
  • 1/2 tsp gluten free baking powder
  • 2 cups gluten free flour blend
  • 1 cup milk with 1/2 Tbsp apple cider vinegar in
  • 1/2 cup water

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9×13 baking pan with parchment paper.
  • In a stand mixer add the softened butter and sweetener and mix.
  • Add the molasses and egg and mix on medium speed.
  • Scrape sides of bowl to incorporate all.
  • Beat again.
  • Add the dry ingredients and and mix on medium speed.
  • Add the milk/vinegar and the water and beat until batter is light and fluffy.
  • Pour batter into baking pan.
  • Bake for 30-33 minutes.
  • Remove and cool.

HOW TO MAKE THE GINGERBREAD COOKIES:

  1. In a stand mixer or hand mixer and bowl, add the vegan butter and brown sugar.
  2. Mix on medium speed.
  3. Add the baking powder, baking soda, spices and salt and mix on low speed.
  4. Add the egg, molasses and apple cider vinegar and mix on low speed until well combined.
  5. Scrape sides of bowl to incorporate all.
  6. Add the gluten-free flour and mix on low speed.
  7. Increase speed to medium and beat for a couple of minutes.
  8. Remove dough and place in a small bowl and refrigerate for 3 hours or overnight.
  9. Preheat oven to 375 degrees.
  10. Line 2 cookie sheets with parchment paper.
  11. Lightly flour the countertop with tapioca starch.
  12. Divide dough in half and use a rolling pin to roll out dough.
  13. Cut dough with various cookie cutters.
  14. Place shapes on parchment paper.
  15. Bake in oven for 9-10 minutes.
  16. Remove and cool.

  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/4 tsp salt
  • 1 large egg
  • 1 tbsp apple cider vinegar
  • 1/2 cup gluten free molasses
  • 3 cups gluten free flour blend (1 to 1)

Instructions
 

  • In a stand mixer beat the vegan “butter” with the brown sugar. 
  • Scrap the sides of the bowl to incorporate all.
  • Add the baking powder, baking soda, spices and salt and mix in.
  • Add the egg, molasses and apple cider vinegar and mix on low speed.
  • Scrape sides of bowl and beat mixture well.
  • Add the gluten free flour and mix on low speed.
  • Increase speed to medium and beat dough really well.
  • Place dough in refrigerator for 3 hours or overnight to chill.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Lightly flour the countertop with gluten free flour.
  • Divide dough in half and roll out with a rolling pin.
  • Dust dough lightly with gluten free flour before rolling to prevent sticking.
  • Cut out dough with various cookie cutters.
  • Place on cookie sheet and bake for 9-10 minutes.
  • Remove and cool.
  • Enjoy!

Gluten Free Vegan Gingerbread People

Ingredients
  

  • 1 tbsp coconut flour
  • 2 1/2 cups almond flour
  • pinch salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • (optional 1/4 tsp cayenne pepper. adds a nice spice to the cookies)
  • 1/4 tsp baking soda
  • 1/4 cup Earth Balance non-dairy butter
  • 2 tbsp organic molasses
  • 1/4 cup honey

Instructions
 

  • In a stand mixer add the non-dairy butter, honey and molasses.
  • Beat until smooth.
  • In a medium bowl whisk the coconut flour, almond flour, all the spices, baking soda and salt.
  • Add dry ingredients to the molasses mixture and mix until a dough forms.
  • Place dough in a small bowl and refrigerate for about an hour.
  • Preheat oven to 325 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Cut another 2 sheets of parchment paper.
  • Place one sheet of parchment paper on counter and place 1/2 chilled dough on it.
  • Place the other sheet of parchment paper on top and then roll dough until thin.
  • Remove top sheet.
  • Cut dough with cookie cutters.
  • Place cookies on cookie sheet and bake for 8-10 minutes.
  • Remove and cool.
  • Enjoy!
