These gluten and dairy-free gingerbread cookies are a fun and festive cookie to make. My gingerbread dough can be used for gingerbread houses and cut-out shapes like trees, gingerbread men and more. I love this time of the year when lights are twinkling, trees are decorated, stockings are hung and the smell of cinnamon fills our houses.

This gluten-free gingerbread dough works really well to make gingerbread houses. The dough when baked up holds up really well when cemented with royal icing. Craving gingerbread? Get out a bunch of holiday cookie cutters and make a batch of these cookies. It is fun dough for kids to use too.
INGREDIENTS NEEDED TO MAKE THE COOKIES:
Gluten-Free Baking Powder
Apple Cider Vinegar
Gluten-Free Flour Blend (1 to 1)
There is just something about making your own homemade cookies that makes me happy! Especially during the holiday season. This gluten-free gingerbread cookies recipe will become your new holiday favourite. They are perfectly spiced and lightly drizzled with royal icing.

HOW TO MAKE THE GINGERBREAD COOKIES:
In a stand mixer or hand mixer and bowl, add the vegan butter and brown sugar.
Mix on medium speed.
Add the baking powder, baking soda, spices and salt and mix on low speed.
Add the egg, molasses and apple cider vinegar and mix on low speed until well combined.
Scrape sides of bowl to incorporate all.
Add the gluten-free flour and mix on low speed.
Increase speed to medium and beat for a couple of minutes.
Remove dough and place in a small bowl and refrigerate for 3 hours or overnight.
Preheat oven to 375 degrees.
Line 2 cookie sheets with parchment paper.
Lightly flour the countertop with tapioca starch.
Divide dough in half and use a rolling pin to roll out dough.
Cut dough with various cookie cutters.
Place shapes on parchment paper.
Bake in oven for 9-10 minutes.
Remove and cool.
This week I plan on baking 6-8 different gluten-free holiday cookies. I like to bake batches and place them in Tupperware containers and store in refrigerator. This way I am well prepared and ready for the holidays. What is your favourite holiday cookie?
