Here is the 2nd of 4 new recipes that I am posting that are gluten free and dairy free.
My last recipe was for Gluten Free Dairy Free Carrot Cake(insert post) and I hope you will give it a try soon.
Todays recipe is for gluten free and dairy free brownies.
Brownies is something that I think everyone likes, or at least most people like.
Who would not want a fudgy double chocolate chip square?
I know I crave a good brownie now and then.
This recipe is also really quick and easy.
Basically once you have ingredients measured its just mixing the wet ingredients and then adding the dry.
Simple!

Gluten Free Dairy Free Brownies

Ingredients
  

  • 4 large eggs
  • 2 cups white sugar
  • 3/4 cup cocoa
  • 1/4 tsp xanthan gum
  • 1/8 tsp salt
  • 1 1/2 tsp baking powder
  • 1 1/3 cup Sobeys Compliments gluten free flour blend
  • 1 cup Enjoy Life chocolate chips
  • 1 cup nuts (almonds, pecans or walnuts)

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray a large 9×9 square pan with coconut oil.
  • In a small bowl whisk the gluten free flour, baking powder, salt, cocoa and xanthan gum.
  • In stand mixer beat the eggs with the sugar until smooth.
  • Slowly add the dry ingredients and beat until combined.
  • Fold in the chocolate chips and nuts.
  • Pour into prepared pan.
  • Bake for 20-25 minutes.
  • Let cool.
  • Enjoy!

Gluten Free Date Cake

All this and gluten free too!
This is a recipe you will want to make and share for dessert with your friends and family.
You can bake this gluten free date cake the day ahead and just warm it in the oven before serving.
I decided to make this cake using Cloud 9 gluten free all purpose baking mix. This gluten free flour blend is available at Costco.
I like that it has buckwheat in it thus making it a higher fiber blend.
You can easily remove these individual cakes from the greased ramekins thus giving you the option to place the small cakes on a plate.

Making and baking the individual date cakes and cooking the caramel sauce.

Gluten Free Date Cake

Ingredients
  

  • 1 1/3 cup water
  • 1 1/3 cup chopped pitted dates
  • 1 tsp baking soda
  • 1/3 cup softened butter (or Earth Balance Baking Sticks(non-dairy))
  • 3/4 cup brown sugar
  • 1 cup Cloud 9 Gluten free all purpose baking mix
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp cardamon and cloves
  • 2 large eggs

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease ramekins.
  • Depending on the size of your ramekins you might need 6-8 of them.
  • Place ramekins on a cookie sheet.
  • In small saucepan bring water to a boil. Add dates and stir.
  • Remove from heat.
  • Add baking soda and stir.
  • Let stand for 10 minutes.
  • Pour softened dates into bowl of a stand mixer.
  • Add softened butter, brown sugar, gluten free flour, baking powder, eggs and spices.
  • Mix on low-medium speed until combined.
  • Pour date batter into each ramekin about 2/3 full.
  • Bake in oven for 35-45 minutes until toothpick inserted in cakes comes out clean.
  • Remove from oven and let cool.

Old Fashioned Caramel Sauce

This is a sauce my Grandma used to make. Warning! This sauce is like fudge – you may not be able to stop eating it.

Ingredients
  

  • 1/2 cup whipping cream
  • 1/2 cup butter
  • 1/2 cup brown sugar

Instructions
 

  • Combine all ingredients in a small saucepan. Heat on medium and stir until butter is melted.
  • Bring to a boil (no stirring) for 5 minutes until slightly thickened.
  • Remove from heat and serve with cake!

Gluten-Free Dark Chocolate Fudge

As promised here is the 2nd of the sinfully rich, gluten free holiday treat recipes for you to make and share with family and friends.
This is a traditional fudge recipe in that you need to cook it for awhile. This is not a recipe that you can start on the stove, walk away and check on periodically. You need to constantly stir and watch this mixture as it cooks. You are dealing with butter, cream and sugar.
Do not be afraid though. The fudge is easy to make as long as you have a good candy thermometer. You want your sugar/cream mixture to set once cooled, this is not a sauce recipe. This caramel needs to get to the soft ball stage in temperature and then it is clear sailing to a great fudge.
One more piece of advice is to line your pan with parchment. I did not in my first batch and the fudge is much harder to slice and serve.

Gluten-Free Dark Chocolate Fudge

Ingredients
  

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup whipping cream
  • 1/2 cup butter
  • Pinch of salt optional: use 1/2 tsp of maldon sea salt to batch, that’s what I did
  • 1/4 cup corn syrup
  • 8 oz dark Chocolate squares
  • 2 tsp good quality vanilla
  • 1/2-1 cup nuts optional

Instructions
 

  • In a medium saucepan add the 2 sugars, butter, whipping cream, corn syrup and salt
  • .Heat on medium heat, stirring while bring mixture to a boil.
  • Make sure you have your candy thermometer in saucepan.
  • Lower heat to low-medium and stir continuously while mixture cooks.
  • Cook fudge until temperature reaches soft ball stage (235-238 degrees) this takes about 20 minutes.
  • When it reaches soft ball stage, remove saucepan from heat and let sit for 10 minutes to cool.
  • Add chocolate squares and vanilla.
  • Stir until chocolate melts.
  • Add nuts and then pour mixture into a lined large square pan.
  • Cool fudge in refrigerator for at least an hour.
  • Enjoy!

Gluten-Free Chocolate Fudge Sauce


What is better on a hot sunny day than a chocolate fudge sundae for dessert? I am not sure, but tonight that is what I was craving. I had bought some fabulous cinnamon candied pecans awhile ago and decided to add them to a sundae.
Making chocolate sauce is really quite easy so I hope you give it a try.




Chocolate Fudge Sauce

Ingredients
  

  • 7 oz bittersweet chocolate
  • 4 tbsp butter
  • 2 tbsp white sugar
  • 2 tbsp corn syrup
  • 3/4 cup milk

Instructions
 

  • To make chocolate sauce, put all ingredients into a small but heavy saucepan.
  • Set over low heat. Stir gently until melted and smooth. Whisk slowly until mixture comes almost comes to a boil and remove from heat.
  • Serve immediately.
  • Store in refrigerator and reheat when needed.
  • I alternated hot sauce, with vanilla ice cream and cinnamon pecans. Yum!
