Cauliflower and Orange Salad with a Lemony Dressing

Ingredients
  

  • 1 cup arugula
  • 2 cups fresh spinach
  • 1/2 cup very thinly sliced cauliflower
  • 1/2 cup shredded carrot
  • 3 tbsp pomegranate seeds
  • 2 mandarin oranges, peeled and cut up
  • 1/4 cup cooked quinoa per serving
  • 3 tbsp sprouted watermelon or pumpkin seeds
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • Juice from 1 lemon
  • Zest from 1/2 lemon
  • 3 tbsp whipping cream (can substitute with coconut milk)
  • 6 tbsp avocado oil

Instructions
 

  • To assemble the salads start with the arugula and spinach and then add the quinoa in a mound on each salad.
  • Add the cauliflower, then the carrots, the oranges and pomegranates, seeds and fresh herbs.
  • Drizzle the dressing over each salad.

For the dressing:

  • In a canning jar add the juice from the lemon, the zest and the whipping cream and avocado oil.
  • Place the lid on and shake until combined.
  • Serve.

I am sharing a new salad recipe with all so close to Christmas for a couple of reasons.

One? I love salads and this salad has a ton of crunch, sweetness and plenty of tang.

Second? It’s the holiday season and in between enjoying all the parties, rich appetizers and Christmas baking it is nice to throw a healthy salad in.

This salad is super easy to put together too and as a bonus is meat less so you can add it to your meatless Monday options.

I also wanted to add in mandarin oranges as well as pomegranates which are readily available in the grocery stores right now.

The lemony dressing can be made in a small glass jar-just add ingredients, place lid on and shake. Just shake!

Ingredients
  

  • 1 pear, peeled, cored and cut into 6 wedges
  • Manchego cheese, cut into 6 slices
  • 6 thin slices speck (smoked proscuitto)
  • 1/2 cup arugula or baby kale
  • 1 tsp white balsamic vinegar
  • 1 tsp olive oil
  • Honey to drizzle

Instructions
 

  • In a small bowl toss the arugula with the balsamic vinegar and olive oil.
  • Place a piece of manchego cheese, then a bit of arugula onto each pear wedge.
  • Wrap each wedge with the speck.
  • You can place a toothpick through the center of each one if you like for serving.
  • Place each wrapped pear wedge onto a plate and drizzle with a bit of honey.
  • They are ready to serve!

HOW TO MAKE THE GINGERBREAD COOKIES:

  1. In a stand mixer or hand mixer and bowl, add the vegan butter and brown sugar.
  2. Mix on medium speed.
  3. Add the baking powder, baking soda, spices and salt and mix on low speed.
  4. Add the egg, molasses and apple cider vinegar and mix on low speed until well combined.
  5. Scrape sides of bowl to incorporate all.
  6. Add the gluten-free flour and mix on low speed.
  7. Increase speed to medium and beat for a couple of minutes.
  8. Remove dough and place in a small bowl and refrigerate for 3 hours or overnight.
  9. Preheat oven to 375 degrees.
  10. Line 2 cookie sheets with parchment paper.
  11. Lightly flour the countertop with tapioca starch.
  12. Divide dough in half and use a rolling pin to roll out dough.
  13. Cut dough with various cookie cutters.
  14. Place shapes on parchment paper.
  15. Bake in oven for 9-10 minutes.
  16. Remove and cool.

  • In a stand mixer beat the vegan “butter” with the brown sugar. 
  • Scrap the sides of the bowl to incorporate all.
  • Add the baking powder, baking soda, spices and salt and mix in.
  • Add the egg, molasses and apple cider vinegar and mix on low speed.
  • Scrape sides of bowl and beat mixture well.
  • Add the gluten free flour and mix on low speed.
  • Increase speed to medium and beat dough really well.
  • Place dough in refrigerator for 3 hours or overnight to chill.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Lightly flour the countertop with gluten free flour.
  • Divide dough in half and roll out with a rolling pin.
  • Dust dough lightly with gluten free flour before rolling to prevent sticking.
  • Cut out dough with various cookie cutters.
  • Place on cookie sheet and bake for 9-10 minutes.
  • Remove and cool.

Gluten Free Vegan Gingerbread People

Ingredients
  

  • 1 tbsp coconut flour
  • 2 1/2 cups almond flour
  • pinch salt
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • (optional 1/4 tsp cayenne pepper. adds a nice spice to the cookies)
  • 1/4 tsp baking soda
  • 1/4 cup Earth Balance non-dairy butter
  • 2 tbsp organic molasses
  • 1/4 cup honey

Instructions
 

  • In a stand mixer add the non-dairy butter, honey and molasses.
  • Beat until smooth.
  • In a medium bowl whisk the coconut flour, almond flour, all the spices, baking soda and salt.
  • Add dry ingredients to the molasses mixture and mix until a dough forms.
  • Place dough in a small bowl and refrigerate for about an hour.
  • Preheat oven to 325 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Cut another 2 sheets of parchment paper.
  • Place one sheet of parchment paper on counter and place 1/2 chilled dough on it.
  • Place the other sheet of parchment paper on top and then roll dough until thin.
  • Remove top sheet.
  • Cut dough with cookie cutters.
  • Place cookies on cookie sheet and bake for 8-10 minutes.
  • Remove and cool.

  • 3 large egg whites
  • 1/2 cup brown sugar
  • 1 cup unsweetened shredded coconut

  • Preheat oven to 350 degrees.

Bottom layer

  • Add the apple cider vinegar to the coconut milk.

  • In a medium glass or metal bowl beat the egg whites until soft peaks form.
  • Slowly add the sugar into the egg whites and continue beating until stiff peaks are formed.
  • Fold in the shredded coconut.
  • Spread the coconut meringue over the batter.
  • Bake in oven for 35-40 minutes.
  • Let cool completely before slicing.

Gluten Free Almond Butter Crunch

Ingredients
  

  • 1 1/4 cups brown sugar
  • 1 tbsp white corn syrup
  • 3 tbsp water
  • 1 cup butter
  • 1/2 cup gluten free dark or milk chocolate chips
  • 1 cup finely chopped almonds

Instructions
 

  • Line a cookie sheet with parchment paper.
  • In a large heavy saucepan add the brown sugar, corn syrup, water and butter.
  • Heat on medium and stir.
  • Place a candy thermometer into saucepan.
  • Increase heat to medium-high and cook until mixture reaches 150 degrees C or 310 degrees F.
  • Remove from heat and add chopped almonds.
  • Stir.
  • Pour mixture onto cookie sheet.
  • Sprinkle the chocolate chips over the hot candy.
  • Chocolate chips will melt quickly and smooth out with a spoon.
  • Place cookie sheet into refrigerator to cool.
  • Once cooled, break into pieces.
  • Enjoy!

This is a recipe you will want to make and share for dessert with your friends and family.
You can bake this gluten free date cake the day ahead and just warm it in the oven before serving.
I decided to make this cake using Cloud 9 gluten free all purpose baking mix. This gluten free flour blend is available at Costco.
I like that it has buckwheat in it thus making it a higher fiber blend.
You can easily remove these individual cakes from the greased ramekins thus giving you the option to place the small cakes on a plate.

Gluten Free Date Cake

Ingredients
  

  • 1 1/3 cup water
  • 1 1/3 cup chopped pitted dates
  • 1 tsp baking soda
  • 1/3 cup softened butter (or Earth Balance Baking Sticks(non-dairy))
  • 3/4 cup brown sugar
  • 1 cup Cloud 9 Gluten free all purpose baking mix
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp cardamon and cloves
  • 2 large eggs

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease ramekins.
  • Depending on the size of your ramekins you might need 6-8 of them.
  • Place ramekins on a cookie sheet.
  • In small saucepan bring water to a boil. Add dates and stir.
  • Remove from heat.
  • Add baking soda and stir.
  • Let stand for 10 minutes.
  • Pour softened dates into bowl of a stand mixer.
  • Add softened butter, brown sugar, gluten free flour, baking powder, eggs and spices.
  • Mix on low-medium speed until combined.
  • Pour date batter into each ramekin about 2/3 full.
  • Bake in oven for 35-45 minutes until toothpick inserted in cakes comes out clean.
  • Remove from oven and let cool.

Old Fashioned Caramel Sauce

This is a sauce my Grandma used to make. Warning! This sauce is like fudge – you may not be able to stop eating it.

Ingredients
  

  • 1/2 cup whipping cream
  • 1/2 cup butter
  • 1/2 cup brown sugar

Instructions
 

  • Combine all ingredients in a small saucepan. Heat on medium and stir until butter is melted.
  • Bring to a boil (no stirring) for 5 minutes until slightly thickened.
  • Remove from heat and serve with cake!

Christmas is right around the corner so I am going to be posting as many new gluten free baking recipes as I can.
That being said, I am sure my family will be quite tired of sweets by the time christmas rolls around.
Christmas is the time to indulge in the occasional sweet treat so why not make it even better by making it yourself.
Most of my recipes are quite easy to make so do not be intimidated that you cannot make a homemade gluten free treat.

This recipe has 2 steps.
First to make and bake the base.
Second to mix the other ingredients, pour over and bake again.

What I also love about this recipe is it does not have any chocolate in it.
Do not get me wrong, I love chocolate.

Gluten Free Apricot Coconut Bars

Ingredients
  

  • 1 cup Robin Hood gluten free flour blend
  • 1/2 tsp xanthan gum
  • 1/4 cup brown sugar
  • 1/2 cup butter
  • 1/2 cup Robin Hood gluten free flour blend
  • 1/2 tsp baking powder
  • 2 large eggs
  • 1 can Eagle Brand condensed milk
  • Pinch of salt
  • 1 1/3 cup unsweetened coconut
  • 1/2 cup pumpkin seeds
  • 1/2 cup dried cranberries
  • 1/2 cup dried apricots, finely chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9×9 pan with parchment paper.
  • In a medium bowl mix the 1 cup flour, xanthan gum and brown sugar.
  • Cut in butter with a pastry blender until mixture resembles coarse crumbs.
  • Press crumbs into the 9×9 square pan and bake for 20-25 minutes.
  • Crust should be lightly brown.
  • Reduce oven temperature to 300 degrees.
  • In a medium bowl, combine the 1/2 cup flour, baking powder and salt.
  • Add the eggs and milk and whisk.
  • Add the coconut, pumpkin seeds, cranberries and apricots and stir.
  • Pour over baked crust.
  • Bake in oven for 30 minutes or until golden on top.
  • Let cool and once cool cut into squares.
  • Enjoy!
