Gluten Free Pumpkin Chocolate Chip Cookies

Ingredients
  

  • 3/4 cup softened butter (Or you can use Earth Balance vegan “butter”)
  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup + 1 Tbsp canned pumpkin purée
  • 1 large egg
  • 1 tsp vanilla
  • 1 3/4 cup gluten free flour blend (I used Compliments GF flour blend available at Sobeys and Safeway or you could use Bobs Red Mills 1 to 1 GF flour blend)
  • 1 tsp cinnamon
  • 1 tsp pumpkin spice
  • 1/2 tsp salt
  • 3/4 cup Only Oats oats (use a non-contaminated dried oats)
  • 1/4 cup GF oat bran
  • 1 tsp baking soda
  • 1/4 cup sliced raw almonds
  • 1/2 cup or more of Enjoy Life chocolate chunks

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray mini muffin pan to grease.
  • In a stand mixer add the softened butter and sugars and beat until light and fluffy.
  • Add the pumpkin purée, egg and vanilla and mix again.
  • Scrape sides of bowl to incorporate all well.
  • In a medium bowl whisk the gluten free flour blend, spices, salt, oats, oat bran and baking soda.
  • Add dry ingredients to mixing bowl and beat on low-medium speed.
  • Scrape sides of bowl again and then mix on low.
  • Add the almonds and mix once more.
  • Use a small ice cream scoop to drop cookie batter into greased mini muffin tin.
  • Bake in oven for 12 minutes.
  • Remove and lightly press to indent baked cookie.
  • Place a chocolate chunk in indent.
  • Allow cookie to cool.
  • Enjoy!

Hello Fall!

Does anyone else just love the changing colors in this season?

What is it about fall that most everyone loves? Could it be that it is also pumpkin season too?

I am sure when you look at the photos of these cookies you are thinking they don’t look exactly like a cookie – well you are right! What did I do?

Well, I scooped out the batter in a small ice cream scoop and baked them in greased mini muffin tins.

I saw the idea on Pinterest and thought I would try it.

There is a trick though. When the cookies come out of the oven they are puffed up like a muffin. Lightly press down into center to deflate and then top with a chocolate chip chunk. The chocolate chunk melts a bit into the warm cookie centre.

You can bake these cookies on a cookie sheet too but I liked the idea of baking in a mini muffin tin.

Ingredients
  

  • 3/4 cup butter, softened (or use Earth Balance vegan “butter” for DF version)
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla
  • 1 1/4 cup gluten free flour blend (I used Compliments GF flour available at Safeway and Sobeys)
  • 3/4 cup baking soda
  • 1/4 tsp salt
  • 1/2 cup gluten free rolled oats
  • 1/2 cup unsweetened coconut
  • 1/2 cup raw pecans, chopped
  • 1/2 cup dark chocolate chips (I used Enjoy Life chocolate chips)
  • another 1/2 cup mini or chunky chocolate chips for a real boost of chocolate in the cookie. Optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 baking sheets with parchment paper.
  • In a stand mixer beat the butter until soft.
  • Add the brown and white sugar and beat together, scraping sides of pan to incorporate all.
  • Add the 2 large eggs and mix again.
  • Scrape sides of bowl to incorporate all.
  • Add the vanilla.
  • In a small bowl whisk the gluten free flour, baking soda and salt.
  • Add dry ingredients and mix well.
  • Add the coconut and rolled oats and mix for just a minute.
  • Add the pecans and chocolate chips and mix on low.
  • I used an ice cream scoop to portion the cookie batter onto the lined cookie sheets.
  • Bake in oven for 10-12 minutes.
  • Let cool on rack.
  • Enjoy!

Firstly I am shocked I never shared this recipe. I really thought I had until I went to make chocolate chip cookies the other day and realized the recipe was not on my blog.

I apologize.

Sometimes I come up with 3 or more new recipes, take photos, remake the recipe, share the photos on social media and then go on to the next new recipe and realize I never actually shared it on my blog.

I was in the kitchen all day long today working on recipes for Amber Approved magazine and for a blogger pasta contest using Catelli gluten free pasta.
I enjoy challenging myself to come up with healthy lunch ideas or a spring time salad using all kinds of citrus fruits.

Playing in the kitchen and coming up with recipes exhilarates me. It fills me with energy to have many cutting boards out, chopping a variety of fruits, veggies and herbs as well as my stand mixer beating a gluten and dairy free dough in the background.
It can look like chaos but in the end four new recipes have been developed and photographed.
While in the midst of this chopping and stirring I thought of pancakes.
Yes, pancakes.
I knew I had a banana in the freezer and decided I would make banana chocolate chip pancakes.
You will be happy I did for I am sharing the new recipe with you.
This recipe is gluten free and dairy free but you can switch to cow milk if you want.

This recipe made about 15 medium pancakes.

These gluten-free and dairy-free banana chocolate chip pancakes are the perfect breakfast for the family. I love to make a big stack of these pancakes on the weekend for brunch.

Gluten Free Dairy Free Banana Chocolate Chip Pancakes

Ingredients
  

  • 1 ripe banana or I like to freeze bananas and then let them unthaw for 5 minutes before using
  • 1 2/3 cup goat milk
  • 1 large egg
  • 1 tbsp sugar
  • 2 tsp gluten free baking powder
  • 1 1/4 cup GF flour blend (I like to use Compliments gluten free flour blend available at Sobeys and Safeway)
  • 1/2 cup Enjoy Life mini chocolate chips

Instructions
 

  • In a large bowl use a stand mixer to beat the banana.
  • Add the egg and sugar and beat until smooth.
  • Add the goat milk and the baking powder and continue beating.
  • Add the gluten free flour and beat until you have a smooth batter.
  • Fold in the chocolate chips.
  • Coat a non stick frying pan with coconut cooking spray and heat pan on low-medium.
  • Pour a dollop of batter on the frying pan and lightly spread out into a circle shape.
  • Cook for about 2-3 minutes and flip pancakes.
  • Cook a couple minutes more.
  • Enjoy!

Ingredients
  

  • This recipe made 20-22 cookies.
  • 1/2 cup Earth Balance vegan “butter”, softened
  • 1/3 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1/2 cup unsweetened peanut butter
  • 1/8 tsp salt
  • 1 tsp good quality vanilla
  • 1 cup gluten free flour blend (I like to use Compliments gluten free flour blend)
  • 1 tsp baking soda
  • 1/2 cup non-contaminated oats (I like to use Only Oats)
  • 1/2 cup raw peanuts
  • 1/2 cup Enjoy Life dark chocolate chips

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookie sheets with parchment paper.
  • In a stand mixer beat the vegan “butter” with the white and brown sugar.
  • Add the egg and peanut butter and vanilla and beat until smooth.
  • I tend to increase the speed of my mixer to ensure a creamy dough at this point.
  • In a small bowl whisk the gluten free flour blend, salt, baking soda and the oats.
  • Add the dry ingredients to the dough and mix until combined well.
  • Add in the peanuts and chocolate chips.
  • Stir in.
  • Use an ice cream scoop to drop the dough onto the lined cookie sheet.
  • Bake in oven for 10 minutes.
  • Remove and cool.
  • Enjoy!

Last month I catered a fashion show for Vagus Fitness. Catering is something I have only done one other time, and that was for Vagus Fitness the year before. I have been a client of Vagus for a year now and this boutique gym has empowered me to get in shape.
Over a year ago I decided that I needed to get my act together! No more diets, no more fads, no more feeling like I was the heaviest person in the room.
I know I will not be a size 0, nor do I want to be. Vagus has inspired me to be in the best shape I CAN BE! I am stronger than I can imagine and feel incredible. It is amazing that getting stronger, working on my cardio health and within a year I have gone down 4 sizes.

Gluten Free Oatmeal Raisin Cookies

Ingredients
  

  • 1 1/2 cup Bob mills gluten free flour blend
  • 1 tbsp arrowroot starch
  • 1 cup unsweetened shredded coconut
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cardamon & nutmeg
  • 2 cups non-contaminated oats
  • 1 cup dark brown sugar
  • 1 cup Earth Balance vegan “butter”
  • 1/3 cup maple syrup
  • 1/2 tsp salt
  • 1 tsp good quality vanilla
  • 1 large egg
  • 1 cup raisins, cranberries, cherries or other dried fruit
  • 1 cup walnuts

Instructions
 

  • Preheat oven to 325 degrees.
  • Line a cookie sheet with parchment paper.
  • In a stand mixer cream the vegan “butter” and the brown sugar.
  • Add the maple syrup and beat, scraping sides of bowl.
  • Add the egg and vanilla and mix again.
  • In a small bowl whisk the gluten free flour blend, baking soda, salt, arrowroot starch and spices.
  • Add the flour mixture and mix.
  • Add the shredded coconut and oats and beat until blended.
  • On low add the walnuts and raisins.
  • Use an ice cream scoop to drop dough onto cookie sheet.
  • Bake for 12 minutes.
  • Remove and cool.

Gluten Free Salted Chocolate Chip Cookie

Ingredients
  

  • 2 cups Compliments gluten free flour blend
  • 4 tbsp cornstarch
  • 1 tsp baking soda
  • 1 large egg
  • 1/4 tsp salt
  • 1 1/4 cup dark brown sugar
  • 1 tsp good quality vanilla
  • 1 cup Earth Balance vegan “butter”
  • 3/4 – 1 cup Enjoy Life chocolate chips
  • Maldon Sea Salt for sprinkling

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a cookie sheet with parchment paper.
  • In a stand mixer beat the vegan ‘butter” and brown sugar until creamy.
  • Add the egg and vanilla and beat again, scraping the sides of the bowl.
  • In a small bowl whisk the gluten free flour blend, cornstarch, baking soda and salt.
  • Add the dry ingredients to the wet and beat until combined.
  • Add the chocolate chips and mix.
  • Use an ice cream scoop to drop cookie dough on lined cookie sheet.
  • Bake in oven for 10-12 minutes.
  • Remove from oven and sprinkle Maldon Sea Salt onto each cookie.

Delicious Mini Chocolate Chip Gluten-Free Cheesecakes

That is the recipe I am featuring today.
What I love about this recipe is it allows you to vary the flavor of the cheesecake quite easily.
Want lime cheesecake?
Substitute the chocolate chips for lime zest and lime juice.
Want classic plain cheesecake?
Remove the chocolate chips and add 1 more tsp of vanilla to the batter.
Want blueberry cheesecake?
Substitute the chocolate chips for 1 cup of blueberries.
That is why I love this recipe.
Getting twelve for dinner and you want an easy dessert recipe that also presents itself in individual portions?
That would be this recipe. In fact this past Sunday that is what I made for dessert.
I substituted the chocolate cookies for gluten free graham crumbs, and I also
substituted the chocolate chips for lime zest and lime juice and topped the individual cheesecakes with whipping cream, a thin slice of lime, fresh raspberries and blueberries.
Did I say yum?

Mini Chocolate Chip Gluten Free Cheesecakes

Ingredients
  

  • 2 pkgs cream cheese
  • 3/4 cup Pyure Stevia Sweetener (you can substitute Splenda or reg white sugar)
  • 3 large eggs
  • 1 tsp gluten free vanilla
  • 500 g Greek Gods plain yogurt
  • 250 ml  sour cream
  • 1 cup Enjoy Life Mini Chips
  • 1 pkg Pamela’s Products Extreme Chocolate mini cookies

Instructions
 

  • Preheat oven to 325 degrees.
  • In bottom of each jar place 2 Chocolate Mini Cookies.
  • In a food processor add cream cheese and process until smooth.
  • Add the sugar and process again.
  • Add the eggs and process until batter is smooth.
  • Remember to scrape the sides and bottom of the processor and beat again.
  • Add the yogurt, sour cream and vanilla and process.
  • Once batter is smooth and creamy pour into a 2 cup measuring dish to allow for easier pouring into the jars.
  • Fill jars less than half way with batter.
  • Sprinkle mini chocolate chips over batter.
  • Pour rest of cheesecake batter into jars.
  • Again sprinkle mini chocolate chips over batter.
  • Put filled cheesecake jars into a large rectangular baking dish.
  • Fill tea kettle with water and boil.
  • Carefully pour boiling water into baking dish making sure to not get any in the jars.
  • Place baking dish in the oven.
  • Bake in oven for 55 minutes.
  • Shut off oven, open oven door slightly and let cheesecakes cool.
  • Once cooled, remove from oven and cheesecakes can be placed in refrigerator until ready to serve.
  • Top with whipping cream and enjoy!
