Poppyseed Info:

Poppyseeds is the seed from the opium poppy plant. The seeds are widely used whole or ground for baked goods like pastries or bread. Poppyseeds are used in a wide variety of cuisines.

Lime poppyseed cake with a simple whipped cream frosting is so light and fluffy. Perfectly limey and perfect for spring or summer. Want the best lime flavour? I suggest using fresh lime juice and lime zest in this cake.

WHAT DO YOU NEED TO MAKE THIS CAKE?

The lime and poppyseed cake starts with creaming together the butter and sweetener. You will then add in the eggs and beat well. Next is the sour cream and then finally you will add the gluten-free flour, lime zest and poppyseeds. The batter is beat well until creamy.

Pour the batter into a lined square baking pan and bake for 40 minutes. While the cake is baking you will make a lime syrup on the stove. Remove the cake from the oven and cool for about 10 minutes. Pour the syrup over the cake and then let the cake cool completely before adding the whipped cream.

Gluten-Free Rhubarb Cake

Rhubarb season is here. Time for some Rhubarb cake, muffins, and Rhubarb strawberry pie. With the fresh produce now coming into the Calgary Farmers Market I’m back to my weekly shopping trip on Friday morning to see what I can load up on. The Innisfail growers had hanging strawberry plants and lettuce gardens available, so those items were purchased first.

I’m keeping my lettuce garden on my kitchen counter,  it’s great to pick off fresh lettuce for salads. The strawberries are getting ate every time someone goes outside which I love. I picked up my usual variety of organic tomatoes, cucumbers, peppers and was ecstatic to see that Rhubarb stalks were available.

Rhubarb technically is a vegetable with a rich tart flavor. It’s a low calorie vegetable full of fiber, anti-oxidants, minerals and vitamin A and B. Rhubarb’s nickname is “pie plant”.
I’ve been adapting some of my old recipes to gluten free using Cup4Cup gf flour mix and thought an old fashioned rhubarb sheet cake would be up for the challenge.

Gluten Free Rhubarb Cake

Ingredients
  

  • 1/2 cup softened butter
  • 1 cup brown sugar
  • 2 cups Cup4Cup gf flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 2 large eggs
  • 1 cup buttermilk
  • 2 1/2 cups of finely chopped rhubarb or 2 cups of stewed rhubarb*

Instructions
 

  • * I like to chop up rhubarb and add it to a medium pot, with about 1/2 cup water. Heat to low and cook rhubarb til it is completely soft. Take off heat and you can the use this softened rhubarb in muffins or other baking.
  • Lightly grease a 9×13 pan with butter.
  • Line the bottom with parchment paper.
  • Heat oven to 350 degrees.
  • In stand mixer, beat butter with brown sugar until light and fluffy.
  • Beat in eggs, one at a time, then add vanilla.
  • In a small bowl, whisk the flour, baking soda, baking powder and salt.
  • Slowly add dry ingredients to butter mixture, while alternating with the buttermilk.
  • Beat until cake batter is smooth.
  • Fold in rhubarb and pour into cake pan.
  • Bake for 35-45 minutes until cake is done.
  • Serve warm or cold.

The ice cream slowly melts and makes the perfect topping. Homemade jam cake is a moist and tender cake that is infused with strawberry jam. My favourite is strawberry jam but you could easily substitute with raspberry, apricot, fig or cherry jam in the recipe.

What were they called when you were a kid? What do you call this spongy cake that you bake on a cookie sheet, roll up and fill with jam, whipped cream, or a fruit filling?

I have been playing with cake roll recipes lately. These cake rolls or jelly rolls were something I grew up with and I’ve been trying hard to perfect a gluten-free version to share here.

This time I worked on a gluten-free chocolate cake roll. One that you can fill with cherry pie filling and whipped cream for a holiday dessert. Or just simply raspberry jam and enjoy it with a cup or tea or a glass of milk.

I will be sharing more cake roll recipes this year. I’ve made a keto/low carb matcha cake roll that is light and perfect for dessert. I have also made a classic gluten free version of a vanilla jam roll.

Gluten-Free Chocolate Cake Roll

Ingredients
  

  • 5 large eggs, separated
  • 1/3 cup Swerve granular sweetener
  • 1/3 cup Swerve granular sweetener
  • 2 tbsp canola oil
  • 1 tsp hazelnut flavouring
  • 1/4 cup unsweetened cocoa powder
  • 1 tbsp unsweetened cocoa powder
  • 1/2 cup gluten free flour blend (1to1)

Instructions
 

  • Preheat oven to 325 degrees.
  • Line a cookie sheet with parchment paper.
  • Add egg whites to a stand mixer and beat until soft peaks form.
  • Add 1/3 cup sugar and beat until stiff peaks form.
  • In a medium bowl beat the egg yolks and the other 1/3 cup of sugar until it is thick and creamy.
  • Add the oil, hazelnut flavor and cocoa and beat well.
  • Fold the egg whites into the egg yolk mixture as well as the gluten free flour until blended.
  • Pour batter onto lined cookie sheet and bake for 12-15 minutes.
  • While baking take out a few towel and wet it so it’s damp.
  • Lay towel on counter.
  • Sprinkle cocoa powder over towel.
  • Remove cake roll from oven and invert it onto tea towel.
  • Gently remove parchment paper.
  • Carefully roll up cake roll.
  • For filling I whipped up cream until thick with a bit of sweetener.
  • I also made a cherry filling using frozen cherries, sweetener and cornstarch.
  • Carefully open up roll.
  • Spread a bit of whipped cream all over roll.
  • Add cherry filling.
  • Gently roll up and place on a serving plate.
  • Cover roll with whipped cream and cherry filling.
  • Enjoy!

As I am sitting here it is snowing in Calgary. Woke up to a ton of snow on my front porch and as of noon now it has not stopped snowing. Guess my time of morning walks with my runners on is over.

This bundt cake is filled with a creamy cream cheese filling and to take this cake to the next level I poured a brown sugar icing over top.

Ingredients
  

  • 1 250g cream cheese
  • 1/2 cup softened butter
  • 1 cup Swerve brown sugar sweetener
  • 4 large eggs
  • 1 tsp vanilla paste
  • 1 1/2 tsp baking soda
  • 1/2 tbsp apple pie spice
  • 1 tsp cinnamon
  • 2 cups gluten free flour blend(1to1)
  • 3/4 cup milk less 1 Tbsp
  • 1 tbsp apple cider vinegar
  • 1 250g cream cheese
  • 1/4 cup granular Swerve sweetener
  • 1 large egg

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray(grease) a bundt pan then sprinkle tapioca starch inside pan.
  • In a medium bowl add the cream cheese,swerve and egg and beat well with a hand mixer.
  • In a stand mixer add the cream cheese and butter and mix on medium speed until it’s creamy.
  • Add the sweetener, eggs, vanilla, baking soda and spices and beat well.
  • Add the gluten free flour and mix on low speed.
  • Add the vinegar to the milk and then add it to the batter.
  • Mix on low speed, then increase to medium and beat batter until creamy.
  • Pour 1/2 the batter into greased pan.
  • Add cream cheese mixture on top.
  • Then add batter.
  • Use a knife to swirl batter into cream cheese.
  • Bake in oven for 45-50 minutes.
  • Remove and cool.
  • Enjoy!

So YES, I grabbed the organic raspberries and blueberries and then instantly knew I needed to go home and bake a cake for these beauties.

That is where this recipe for Simple Vanilla Cake came from-the need for me to have a vanilla cake for some fresh berries.

Ingredients
  

  • 1/2 cup softened butter
  • 1/3 cup granular Swerve sweetener
  • 1/3 cup brown Swerve sweetener
  • 3 large eggs
  • 1 tsp vanilla
  • 1 3/4 cup gluten free flour blend
  • 1 tbsp apple cider vinegar
  • 1 cup milk – 1 Tbsp
  • 2 tsp gluten free baking powder

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a square baking pan with parchment paper.
  • In a stand mixer add the butter and the sweeteners.
  • Mix well.
  • Add the eggs and vanilla and beat, scraping sides of bowl to incorporate all.
  • Add 1 Tbsp apple cider vinegar to 1 cup measuring cup.
  • Fill with milk.
  • Add baking powder and gf flour blend to bowl and mix on low speed.
  • Add sour milk and mix on low.
  • Increase speed to medium and beat until batter is light and fluffy.
  • Pour batter into lined pan.
  • Bake for 28-30 minutes.

  • 1/2 tsp cloves
  • 1 tsp each cinnamon, ginger and cardamon
  • 1/2 tsp baking soda
  • 1/2 tsp gluten free baking powder
  • 2 cups gluten free flour blend
  • 1 cup milk with 1/2 Tbsp apple cider vinegar in
  • 1/2 cup water

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9×13 baking pan with parchment paper.
  • In a stand mixer add the softened butter and sweetener and mix.
  • Add the molasses and egg and mix on medium speed.
  • Scrape sides of bowl to incorporate all.
  • Beat again.
  • Add the dry ingredients and and mix on medium speed.
  • Add the milk/vinegar and the water and beat until batter is light and fluffy.
  • Pour batter into baking pan.
  • Bake for 30-33 minutes.

Gluten Free Pumpkin Sheet Cake

Ingredients
  

  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 can organic pumpkin purée
  • 1/2 cup softened butter (or use earth Balance vegan “butter)
  • 1/2 cup plus 2 Tbsp buttermilk ( or you can use goat milk + 1 tsp apple cider vinegar)
  • 2 large eggs
  • 2 cups gluten free flour blend (I used Compliments brand found at Safeway and Sobeys or use could use Bobs Red Mill 1 to 1 flour blend)
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1 tsp baking soda
  • Pinch of salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 13 x 9 baking pan with parchment paper.
  • In a stand mixer add the softened butter and sugars and mix well.
  • Add the pumpkin purée, eggs and buttermilk and beat on medium speed.
  • Scraping sides of pan to incorporate all.
  • In a small bowl whisk the flour and remaining dry ingredients.
  • Add to mixer bowl and beat on medium speed.
  • Beat for 2-3 minutes to get a lot of air into cake batter.
  • Transfer batter to lined baking pan.
  • Smooth batter out before putting into the oven.
  • Bake for 30-32 minutes or until a toothpick inserted into centre of cake comes out clean.
  • Remove from oven and cool.

Brown Sugar Icing

  • In a small saucepan add 12/ cup butter, 1 cup brown sugar and heat on medium.
  • Stir and bring mixture to a boil.
  • Reduce heat to low/medium and cook for 3 minutes stirring occasionally.
  • Add 1/4 cup milk and 1 tsp vanilla. Increase heat to medium and cook for another 2-3 minutes.
  • Remove from heat and let cool for a couple of minutes.
  • Whisk in 1 1/2-2 cups icing sugar until icing is smooth.
  • Less icing sugar means a runnier icing whereas adding the whole 2 cups means a thicker icing.

It’s that time of the year.

One of my favorite times of the year when the leaves are changing color, the farmers markets are a bounty of local fruits and vegetables and the smell of pumpkin starts to fill our kitchens.

Gluten Free Vanilla Layer Cake

I realized the other day that I did not have a recipe for gluten free layer cake, or for most parents that means birthday cake. Maybe because my kids are grown up and I am no longer hosting kids birthday parties and thus no longer making layer cakes.
I do remember making a ton of cakes with having 3 kids, but again, those days are over, no longer coming up with birthday themes and then cakes to match. I do miss those days but maybe sometime I’ll have grandchildren and can “help” with the birthday celebrations.
When my kids were little no one in my household, including myself were gluten free. Now, not only do cakes have to gluten free, for 2 of my kids they also need to be dairy free. That in itself for most would feel like a challenge, or even impossible.
Well. If you are looking to buy a gluten and dairy free cake at your local grocery store, yep, that is impossible.
But if you are willing to pick up a few ingredients and spend a little time in the kitchen, you can serve and celebrate a delicious cake with your family.

I am first going to share a gluten free vanilla layer cake, but later, in a few weeks I will share a chocolate one.
You will see I used goat milk in the recipe but if cow dairy is not an issue for you, please substitute buttermilk in the recipe. I primarily use goat milk with added apple cider vinegar because I find it replicates buttermilk almost exactly. Buttermilk, I find in gluten free baking adds height to my baking. It makes my baking rise more, thus making it more airy and not so dense.

Gluten Free Vanilla Layer Cake

Ingredients
  

  • 1 1/4 cup Earth Balance vegan “butter”, softened
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 1/2 tsp good quality vanilla
  • 4 large eggs
  • 2 cups goat milk
  • 1 tbsp apple cider vinegar
  • 1/2 tsp salt
  • 3 cups gluten free flour blend (I use Compliments gluten free flour blend available at Safeway and Sobeys)
  • 1 tsp baking soda
  • 1 tsp baking powder

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 3 (8 inch) round cake pans with parchment paper.
  • In a small bowl whisk the gluten free flour, salt, baking soda and baking powder.
  • In a small bowl mix the goat milk and apple cider vinegar together.
  • Using a stand mixer, beat the vegan “butter” with the white and brown sugar, until smooth.
  • Scrap sides of bowl.
  • Add the eggs and continue beating mixture, scraping sides of bowl to incorporate all.
  • Alternately add the goat milk mixture, flour mixture and the vanilla.
  • Mix on medium speed until you have a smooth and light batter.
  • Divide batter evenly into the lined baking pans.
  • Bake in oven for 22-30 minutes.
  • Remove from the oven and cool for about 20-30 minutes.
  • Once cooled, invert cakes and remove from pans.
  • Place cakes on cooling racks and let cool completely.
  • Spread icing on each layer and frost the cake.

Gluten Free Banana Sheet Cake

If you are like me you always seem to end up with overly ripened bananas on your counter. Yes, I usually put them in the freezer for future use but sometimes even my freezer seems to have too many unused bananas in it.
That is why I like to have a few banana recipes on my blog for you to look through. This recipe makes enough for a 9 x 13 baking pan and that is especially nice when you have a larger group expected at your house or you need a dessert for that holiday party or pot luck dinner.
This is an easy recipe to make too for it bakes in one pan. You can easily jazz this cake up with a cream cheese frosting and then top it with sugared banana chips and pecans. Does that not sound delicious?

I again used vegan “butter”, goat milk and dairy free cream cheese in this recipe but if dairy is not a problem for you feel free to use the regular butter, milk and cream cheese.
I am a big fan of using goat milk as an alternative to cows milk for when apple cider vinegar is added to it it resembles buttermilk. Buttermilk aids in helping your gluten free baked goods rise and so does the goat milk.

Gluten Free Banana Sheet Cake

Ingredients
  

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 2 cups gluten free flour blend (I used Compliments gluten free flour blend that is available at Safeway and Sobeys)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 cup chopped pecans
  • 1/2 cup chopped organic banana chips
  • 3 overly ripened bananas
  • 1/2 cup goat milk
  • 1 tsp apple cider vinegar
  • 1/2 cup Earth Balance vegan “butter”, softened
  • 3 large eggs
  • 1 tsp good vanilla

Tofutti dairy free cream cheese

  • 2 tbsp softened Earth Balance vegan “butter”
  • 1 tsp cinnamon
  • 1 tsp good vanilla
  • 3/4 cup icing sugar

Instructions
 

  • Preheat oven to 350 degrees.
  • Line a 9 x 13 baking pan with parchment paper.
  • In a small bowl whisk the gluten free flour blend, salt, baking soda and spices together.
  • In a small bowl add apple cider vinegar to the goat milk.
  • Add the eggs and whisk together.
  • In a stand mixer blend the vegan “butter” with the brown and white sugar.
  • Add the bananas and mix until creamy scraping the sides of bowl to incorporate all ingredients.
  • Add the flour mixture, goat milk and vanilla and beat until batter is smooth.
  • Add the chopped pecans and banana chips and mix on low until combined.
  • Pour batter into prepared baking pan.
  • Bake in oven for 30-35 minutes until cake is done.
  • Remove from oven and cool.
  • Top cake with optional frosting.

Frosting

  • In a stand mixer blend the softened vegan “butter” with the cream cheese and vanilla.
  • Add the icing sugar and increase speed to medium.
  • Blend until smooth.
  • Spread frosting on cooled cake and serve.
