Gluten-Free Vegan Chickpea Burger

As promised in my last burger blog I am posting a recipe for a vegan burger. Imagine Lebanese and Indian flavors and spices combined in a sweet and healthy burger.
This is that.
I have started switching things up a bit, playing with different spices and flavor combinations and hope you try it also. This burger can be quite easy to make if you want to use canned ingredients. For instance canned chickpea, canned lentils, and canned sweet potato puree, but you can also make your own chickpeas and lentils from dried. Plus you also can roast a sweet potato for the puree. You can decide how much homemade you want.

Vegan Chickpea Burger

Ingredients
  

  • 1 cup cooked chickpeas
  • 1 cup cooked brown lentils
  • 1/4 cup sweet potato puree
  • 1/2 cup chopped onion
  • 1 tsp cumin
  • 1 tsp sambal oelek (ground fresh chili paste) you can find it in asian grocery stores
  • 1 tsp dried cilantro
  • 1 tsp curry powder
  • 1/4 cup chickpea (gram) flour
  • Salt and pepper
  • Gluten free buns
  • Mango chutney
  • Romaine lettuce
  • Arugula

Instructions
 

  • Put the chickpeas and lentils into a food processor.
  • Pulse until coarsely chopped.
  • In a large bowl add remaining ingredients (sweet potato, onion, spices and flour)
  • Stir well to combine.
  • Heat up frying pan to low/medium heat with 1 Tbsp grapeseed oil.
  • Scoop mixture into a ½ cup measuring cup and dump onto frying pan.
  • With finger pat mixture into patty form.
  • Cook patty 3-4 minutes on each side.
  • To assemble burger, toast gluten free buns.
  • Top bottom bun with curry mayo.
  • Top with lettuce and then veggie burger.
  • Top veggie burger with ½-1 Tbsp mango chutney.
  • Top the chutney with arugula and then top of bun.

Curry Mayo

Ingredients
  

  • 1/2 cup vegan mayo
  • 1/4 tsp curry powder
  • 1/4 tsp sambal oelek

I really enjoyed the flavor combination and texture of this burger. Even though I am not a vegetarian or vegan I will make this burger again. I think this would be a great appetizer. Make the patties quite small and top with a spicy yogurt dip or as the filling for a lettuce wrap.

We are coming up to the end of Burger Fridays. I hope everyone has enjoyed some of fun burger combinations I’ve worked on this summer. With September approaching I am going to switch to back-to-school lunches and gluten free crockpot suppers. September means the start of hockey try-outs, back to school routines, crazy evening meals and homework time. I’m finished with all that, but I do remember those busy scrambled days and evenings. I still have the month of September to go until I get my kitchen back, so I’ll work on no-bake goodies and hearty, throw in the crockpot in the morning-ready for suppertime meals.
Any suggestions? Any requests? More vegan, vegetarians, dairy free combos? Maybe warming soups and chilis?

Pineapple Teriyaki Burger

Ingredients
  

  • 1/2 pkg ground pork
  • 1/2 pkg ground chuck
  • 1/4 onion, finely chopped
  • Premier Japan GF Hoisin Sauce
  • 1 tbsp GF Kikkoman Soy Sauce
  • 1 pkg Swerve sweetener or 1 tsp sugar
  • 1 tsp minced garlic
  • 1 fresh pineapple, sliced into rings
  • 1/2 onion, sliced into thick rings
  • Iceberg lettuce large leaves

Instructions
 

  • In a medium bowl combine ground meats, 1 Tbsp Hoisin sauce, soy sauce, garlic, chopped onions and sweetener.
  • Mix with large spoon until combined.
  • Form into 4 large patties.
  • Cut up fresh pineapple into thick rings.
  • Heat BBQ to medium heat.
  • Add patties to BBQ and grill for 12-15 minutes until cooked thoroughly.
  • Remove from BBQ.
  • Place onion rings on grill and cook for 5-8 minutes, flipping so that both sides are nicely brown.
  • Remove from BBQ.
  • Place pineapple rings on BBQ and watching carefully(high sugar content of pineapple can cause it to burn quickly) grill for 5-6 minutes.
  • Making sure to flip and grill both sides.
  • Remove from BBQ.
  • To plate burgers, place are lettuce leaf on plate.
  • Place grilled patty on lettuce and also top with 1/2-1 Tbsp hoisin sauce.
  • Top burger with grilled onion and then grilled pineapple ring.
  • Wrap up burger in lettuce leaf and enjoy!

So here it is folks, the first of the Burger Friday recipes I’ve been promising. Now that I’m living low carb, I really find the need to infuse as much flavor and variety into the burgers I BBQ this summer. I want the patty to stand on its own. I don’t want to feel like the bun is missing or that I am depriving myself.
You’re going to see a lot of stuffed burgers, burger sauces, as well as multi layered toppings. Offering sweet and salty, and crunchy.
I’m going to travel the globe in spices, and mostly use ingredients that you should already have in the kitchen.

 
Speaking of Kitchen- I’m still without. Truthfully, we’ve ate out only a couple of times. I’d rather stop at the grocery store, fire up the BBQ and whip up a healthy salad and burger for us. I’m sure my attitude will change the longer the reno goes on, but for right now-I’m handling it.
What have you been barbecuing lately? Have you’ve been getting more adventurous in your cooking? The first burger recipe is for a cheddar cheese stuffed burger that is also topped with an easy one-bowl red sauce.
 

Cheddar Cheese Stuffed Burgers

Ingredients
  

  • 1 pkg lean ground beef
  • 1/4 cup chopped onions
  • 1/2 tsp cumin
  • 1 tsp paprika, oregano and chili pepper
  • 1 tbsp hot sauce
  • 1 tbsp gf ketchup
  • 1 tbsp grapeseed oil
  • sharp cheddar cheese

Instructions
 

  • In a medium bowl, combine the ground beef with the onions, spices,  hot sauce and ketchup.
  • Mix well.
  • Cut up cheddar cheese into 1 inch squares. (I made 4 Xlarge patties with this recipe, so that would mean 4 squares of cheese.)
  • Divide your ground meat mixture into even portions. 
  • Form a flat patty of beef in the palm of your hand. 
  • Place the square of cheese in the middle of the patty and then bring beef over sides and top of cheese making sure it is sealed in.
  • Place patties on a plate while you are preparing the grill and making the quick red sauce for the burgers.
  • Just before I grill my burgers I like to pour a little grapeseed on the patties, this keeps the burger from sticking to your bbq.

Cheddar Cheese Stuffed Burger

Easy One-Bowl Red Sauce

Ingredients
  

  • 1/2 cup buttermilk
  • 1/2 cup sour cream
  • 1/4 cup gf ketchup
  • 1 tsp minced garlic
  • 1-2 green onions, finely chopped
  • 1 tsp dried parsley and dill (or use 1 Tbsp fresh)
  • 1 tbsp freshly squeezed lemon juice
  • 2 tbsp hot sauce

Instructions
 

  • Combine all ingredients in a small bowl and whisk until smooth.
  • Keep in refrigerator until ready to use.
  • Heat up BBQ to medium heat.
  •  Place patties on barbeque and cook for 8-10 minutes per side.
  • Remove from grill.
  • Top the burgers with the red sauce, adding whatever other toppings you would like.
  • These burgers would be great in a gluten free hamburger bun,or if your doing low-carb can be easily wrapped in lettuce.

Since I started gluten free burger Fridays I have made burgers using sirloin beef. Well today and next week I thought I would devote my blog to a vegetarian option. This week my burger is made using the great superfood QUINOA. Yes, you can make other things with quinoa beside cookies and cakes. Quinoa is a wonderful choice for a vegetarian burger for it, as I said is a superfood-full of protein and nutrients. I have also packed this burger with an abundance of vegetables, chopped in a food processor and then sautéed to bring out their full flavors.
I hope you give this burger a try and let me know what you think. This burger is not vegan though, for I used an egg to bind the ingredients. I will play with more recipes in the future and work on a vegan burger also. Any ideas?



Gluten Free Vegetarian Quinoa Burger

Ingredients
  

  • 2 cups cooked quinoa
  • Avocado oil for sautéing the veggies
  • 1/2 cup finely chopped onions
  • 1 cup carrots, finely shredded
  • 2 stalks celery, finely chopped or shredded
  • 1 cup white mushrooms, shredded
  • 1 jalapeno, finely chopped
  • 1 egg
  • 3 tbsp cornstarch
  • 1/4 cup sweet potato puree (I use canned sweet potato puree or you can make your own)
  • 1 tsp red pepper flakes
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp sweet paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp new Mexican chili powder
  • 1/2 tsp maldon sea salt

Instructions
 

  • In a food processor, finely shred the onions, carrots, celery and mushrooms.
  • Chop the jalapeno by hand.
  • Remove any larger pieces from the food processor.
  • Heat a large saute pan on low-medium with 1 Tbsp of avocado oil.
  • Add all the veggies and cook until they are softened.
  • Once softened add the spices and on low heat cook for 2 more minutes to let the spices heat up and flavors absorb.
  • In a large bowl add quinoa and sautéed vegetables.
  • Stir to combine.
  • Once combined add egg, cornstarch, and sweet potato.
  • Combine well.
  • Heat a non stick frying pan on low-medium heat with 1 tsp avocado oil.
  • Fill a ½ cup measuring cup firmly, with quinoa mixture.
  • Turn measuring cup over onto frying pan.
  • Then with your hands pat the patty down to the size that you would like.
  • I like mine to be the same size of a beef patty.
  • Fry patty for 3-5 minutes, on each side, making sure not to burn the quinoa.
  • Assembling the burger, I toasted my gluten free bun and put regular mayonnaise on the bottom.
  • I also topped my burger with jalapeno Monterey jack cheese for a bit of added flavor.
  • Top with a couple slices of tomato and then top with bun.

Gluten-Free Burger with Peppy Cranberry Sauce


This weeks burger is a twist on holiday flavors. Does cranberry sauce only go with thanksgiving? Does it only go with turkey? Why not on a burger I thought.
Well, as usual I was very pleased with my experimentation and in fact think this is one of my top picks for burgers so far.





Peppy Cranberry Sauce

Ingredients
  

  • 1 can ocean spray whole cranberry sauce
  • 1/2 tbsp red pepper flakes
  • 1/8 tsp cumin
  • 3-4 drops Tabasco sauce (Optional)

Instructions
 

  • Heat all ingredients in a saucepan on low heat.
  • Stir and cook for 5-10 minutes.
  • Cool and serve.

Peppy Cranberry Burger

Ingredients
  

  • Peppy Cranberry sauce
  • Dried cranberries
  • Cumin
  • Cinnamon
  • Chopped onions
  • Gluten free hamburger buns
  • 5 yr aged cheddar cheese (I get mine from Sobeys)

Instructions
 

  • For the burger patties this time, I added dried cranberries, cumin, cinnamon and chopped onions.
  • Once grilled, these burgers had a caramelized texture.
  • Top grilled patties with aged cheddar cheese, let melt.
  • Top toasted bun with grilled patty.
  • Top burger with cranberry sauce.
  • Place top of bun on and enjoy!

Gluten-Free Salsa Burger


Todays inspiration for a burger came from my week in Sante Fe, New Mexico. I wanted a burger that had heat and flavor, a lot of what I ate while in Sante Fe. I enjoyed my time there and will do a travel blog next week on my food adventure. I’ve been doing quite a bit of travel this year so I will have quite a few travel blogs for you.

I call this my Salsa Burger for it has Mexican flavors that I really enjoy-and of course, is a twist on the basic cheeseburger.

Gluten Free Salsa Burger

Ingredients
  

  • 1/2 cup med salsa
  • 1/2 cup plain greek yogurt
  • 5-6 drops lime hot sauce
  • Gluten free hamburger buns
  • Lean ground sirloin
  • Extra sharp white cheddar cheese
  • Thick sliced bacon
  • Jar deli mild pepper rings
  • 1 avocado

Instructions
 

  • To make the salsa sauce, mix in bowl ½ cup salsa, yogurt and 5-6 drops hot sauce (the amount of hot sauce will vary depending on your spice level).
  • Cook burgers on barbeque.
  • Remember that you can also cook bacon on the barbeque (it is a much easier and cleaner way of cooking the bacon)
  • Top burgers with sharp cheddar cheese and let melt for a few minutes.
  • To assemble burgers, top bottom bun with salsa sauce.
  • Place burger with cheese on sauce.
  • Top burger with pepper rings.
  • Top pepper rings with bacon and sliced avocado.
  • Top with bun and enjoy!

Gluten-Free Burger with Caramelized Onions



This Burger Friday is a sweet, creamy, spicy and savory burger. I loved how all the flavors came together. Think spicy mayo, burger, hot sauce, goat cheese, and caramelized onions. All that in a gluten free bun, plus a creamy coleslaw on the side. What could be more summertime than this?
This burger may seem like a lot of work once you are done making all the sauces for it, but realize you can use them for other burgers. You will be making homemade ketchup for the spicy mayo. You will be making caramelized onions that you stirred slowly for 20 minutes. You will be making creamy coleslaw as a side. Yes, all this takes sometime, but I will guarantee it is worth it once you take your first bite.

Homemade Ketchup

Ingredients
  

  • 1 can chopped tomatoes (28 oz)
  • 1 can tomato paste (small)
  • 1 large onion chopped
  • 1 cup red vinegar
  • 1/2 cup sugar
  • 1/2 cup olive oil
  • 2 heaping tsp nutmeg
  • 1/8 tsp allspice
  • 2 bay leaves
  • Salt and pepper

Instructions
 

  • Pour everything into a saucepot and bring to a simmer over medium heat.
  • Continue cooking until the mixture reduces by half, about 45 minutes.
  • Puree until smooth with an immersion blender or food processor.

Spicy Mayo

Ingredients
  

  • 1 cup mayonnaise
  • 1 1/2 tbsp homemade ketchup
  • 1 1/2 tbsp Sriracha

Instructions
 

  • Mix everything together.
  • Store in fridge.

Caramelized Onions

Ingredients
  

  • 2 onions sliced
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 tsp white sugar

Instructions
 

  • In a skillet, melt butter and olive oil over med high heat.
  • Add onions and cook, stirring constantly until onions begin to soften (about 5 minutes).
  • Stir in sugar and cook, stirring frequently, until onions are golden brown (about 20 minutes).
  • It is important not to walk away while they are cooking for you do not want burnt onions.
  • Be patient.

Creamy Coleslaw

Ingredients
  

  • 1 bag cabbage/carrot slaw
  • 2 tbsp apple cider vinegar
  • 2 tsp white sugar
  • 1/3 cup mayonnaise
  • 1/4 cup canola or grapeseed oil
  • Salt and pepper
  • 5-6 drops hot sauce

Instructions
 

  • In a large bowl, whisk together the vinegar and sugar until sugar dissolves.
  • Whisk in the mayonnaise and oil, add salt, pepper and hot sauce.
  • Add cabbage mix and stir.

Caramelized Burger Combo

Ingredients
  

  • Lean ground sirloin
  • Hot sauce
  • Plain goat cheese
  • Caramelized onions
  • Spicy mayo
  • Gluten free hamburger bun

Instructions
 

  • Barbeque hamburgers, once finished top with hot sauce and then a large chunk of goat cheese and let melt for a few minutes.
  • Remove from barbeque.
  • Top hamburger bun with spicy mayo.
  • Top hamburger bun with bbq burger topped with goat cheese.
  • Top the cheese with the caramelized onions and then the top of the bun.
  • Serve with creamy coleslaw. Enjoy!

Gluten-Free Burger with Chimichurri

Summer is here in Calgary and that means flowers blooming, friends over for barbeques and firepits.

I have also been making a lot of sauces from scratch lately and decided that on Fridays I will share a new and tasty burger with you. It has been a lot of fun playing with spices, sauces, and side dishes so I hope you will follow along with me on Fridays and see what I have been making.
Having a gluten free bakery in the area has also been a blessing for me for I am able to get great tasting gluten free hamburger buns here. Before the bakery I would make lettuce wrap burgers, which were fine, but I am sorry… there is nothing like a burger and bun combo. Heh, don’t we all just want to feel like everyone else out there? I know we cannot get a fast food burger anywhere, but homemade ones are always better anyhow.
This first burger comes from the great appetizer, Caprese salad. I love fresh mozzarella, great tomatoes and fresh basil on a plate. I picked up fresh mozzarella at my local cheese store, some great heirloom tomatoes at the farmers market and went to work in the kitchen. In a caprese salad you use fresh basil, I was unable to find any today so decided to substitute a freshly made chimichurri sauce instead. I as not disappointed with the substitution-the flavor combo was wonderful.
Todays burger is a chimichurri, mozzarella, fresh tomato burger. What makes it so good is the fresh ingredients, try to get some fresh mozzarella, pick up some farmers market tomatoes and make a fresh sauce. Yum!

Chimichurri

Ingredients
  

  • 2 cups packed fresh parsley leaves
  • 1 tbsp fresh oregano leaves (or use 1 tsp dried oregano)
  • 4 cloves garlic
  • 1 tsp Spanish smoked paprika
  • 3 tbsp red wine vinegar
  • 1/2 cup extra virgin olive oil
  • Salt and pepper

Instructions
 

  • To make the chimichurri, combine the parsley, oregano, and garlic in a food processor.
  • Pulse until coarsely chopped.
  • Add the paprika, vinegar, oil, and process until smooth.
  • Season with salt and pepper.
  • Scrape into a bowl and let it sit at room temperature for 30 minutes before serving.

Burgers

Ingredients
  

  • Lean ground sirloin (I like the sirloin I get at superstore)*
  • Lightly toasted gluten free hamburger buns (in Calgary I use GF Patisserie, in Toronto Aidens bakery has a great gluten free hamburger bun)
  • Large heirloom or steak tomato
  • Fresh mozzarella (Superstore, Sobeys carries fresh mozzarella or use your local cheese shop)
  • Chimichurri sauce

Instructions
 

  • *I do not add anything fillers to my burgers other than some spices at times.
  • To assemble the burgers
  • Before you take the burgers off the barbeque top each one with a large slice of fresh mozzarella, let it melt for a few minutes.
  • On bottom half of bun top with the burger and mozzarella.
  • Top the burger with 1 Tbsp chimichurri sauce, and then a fresh tomato slice.
  • Place top of hamburger bun on burger and EAT!
