Gluten Free Burger with Bacon, Tangy Rhubarb BBQ Sauce & Jalapeno Cheese


This weeks burger combo is a mixture of seasonal and local flavours. I had been out to my sisters place recently and she had given me quite a bit of rhubarb from her garden. I love rhubarb but tend to think of it as a dessert/sweet item not a savoury one. So with making homemade sauces lately I decided to add rhubarb to a barbecue sauce and as always was pleased with the flavour.
I also made a remoulade sauce with bits of herbs and a couple of pickles left in a jar. That recipe is also included here.
Recipe: Tangy Rhubarb Barbeque Sauce
1 cup chopped fresh or frozen rhubarb
2/3 cup water
1 T Tabasco sauce 2 Tbsp Worcestershire sauce
1 cup ketchup (click for recipe)
2 Tbsp apple cider vinegar
2/3 cup brown sugar
1 tsp liquid smoke
1 Tbsp garlic chopped
1 onion chopped
1 tsp grapeseed oil
½ cup agave syrup (or you could use golden syrup)
1 Tbsp Dijon mustard
In a saucepan bring rhubarb and water to a boil. Turn down heat to simmer and cook for 5-10 minutes until tender. Time varies depending on fresh or frozen rhubarb. Remove from heat and add mixture to food processor.

Pulse rhubarb until mixture is smooth.
In same saucepan add oil and chopped onions. Cook on med until tender. Turn heat down to simmer and add garlic. Cook for 1 minute and then add all remaining ingredients including rhubarb.

Cook on med heat until mixture is boiling, add lid and turn heat down to simmer. Cook for 10-15 minutes, stirring occasionally.
Store in refrigerator.

Recipe: Tangy Remoulade
3 Tbsp chopped chives
2 tsp capers
1 tsp garlic
1 cup mayo
1 Tbsp grainy mustard
1 large dill pickle
2-3 drops Tabasco (optional)
In a food processor, pulse chives, capers, garlic and dill pickle until finely chopped. Add mayonnaise, mustard and hot sauce and blend until smooth.
Store in refrigerator.

Recipe: Gluten Free Burgers
Rhubarb sauce
Tangy remoulade
Spring lettuce
Jalapeno jack cheese
Thick sliced Bacon (2 strips/burger)
Gluten free hamburger buns
To assemble burgers first wrap uncooked patties in bacon.

Once bacon and burger are cooked, melt jalapeno cheese on top.
Spread remoulade sauce on toasted bun.

Place lettuce on remoulade and then grilled burger on lettuce.

Spread a dollop of rhubarb sauce on burger.

Place top on burger and enjoy!

Cauliflower Bacon Chowder

Here is another warm soup recipe for these cold winter nights we are having this January.
It has been quite cold here and as a daily power walker it has been a challenge at times to get outside for my 90 minute walk. But I’ve not missed one day of walking in well over 100 days not.
What do I mean by cold?
Well there have been a lot of days where the temperature is -20 Celcius or colder.
That is cold!

I have committed to walking every day so I invested in some merino wool clothing and it has made a dramatic difference in keeping me warm.
The one thing I can say about Calgary even on cold days, is we usually have the bluest sky and it makes for a pretty picture when I am out.

I decided to switch up my normal thanksgiving ham and corn chowder soup recipe with cauliflower and bacon. Cauliflower once cooked for awhile purees into a smooth and creamy mixture and I thought it would be a perfect substitution for potatoes.
Plus cauliflower is low carb so I knew it would be a healthier alternative to using potatoes.

Cauliflower Bacon Chowder

Ingredients
  

  • 3/4 head cauliflower, chopped into small pieces
  • 1 L gluten free chicken broth
  • 5-6 slices thick bacon, chopped
  • 1/2 cup celery, chopped
  • 1 shallot, finely chopped
  • 1 cup frozen corn
  • 1/2 cup cream

Instructions
 

  • In a frying pan add the chopped bacon, celery and chopped shallot and cook until crispy.
  • Drain excess fat and remove from heat.
  • Add bacon mixture to a medium soup pot.
  • Add the chicken broth and chopped cauliflower and turn heat to medium for 5 minutes.
  • Stir, cover pot and turn heat to low.
  • Let soup simmer for 40 minutes.
  • Add the corn and cook for another 15 minutes.
  • Use an immersion blender to purée half of the soup.
  • Add cream and stir into soup.
  • Remove from heat and serve.

Gluten Free Double Coconut Bacon Cookies

So in 2016 I am striving to share more savoury gluten free recipes and not just sweet recipes with you all.
But in saying that and I promise the next couple recipes I share will NOT be a cookie recipe, I am sharing a new gluten free cookie recipe with you all today.
I just have too, I really do!

Double coconut, bacon, pretzel salty bites and chocolate are all in this gluten free drop cookie.

First though let me clarify the bacon in this cookie. I used coconut bacon, yep – that does exist and I love it in a cookie. So I guess that makes this bacon cookie actually vegetarian!
I found the coconut bacon at my local London Drugs store and I find they carry a large assortment of gluten free items which I like.
I also used pretzel bites in this recipe which I found at Superstore.

Gluten Free Double Coconut Bacon Cookies

Ingredients
  

  • 2 1/4 cups Compliments gluten free flour blend (I find this blend at Sobeys and Safeway stores here)
  • 3/4 cup brown sugar
  • 1 cup white sugar
  • 1 cup Earth Balance vegan “butter”, softened
  • 2 large eggs
  • 1 tsp gluten free baking powder
  • 1/4 tsp salt
  • 1 tsp good quality vanilla
  • 1 cup non contaminated oats
  • 1/2 cup sliced almonds
  • 1 cup gluten free pretzel bites (I used Presidents Choice brand)
  • 1/2 cup Blue Monkey dark chocolate coconut chips
  • 1/2 cup Everyday Superfoods Canadian Maple “bacon” coconut snack

Instructions
 

  • Preheat oven to 350 degrees.
  • Line 2 cookies sheets with parchment paper.
  • In a stand mixer beat the vegan “butter” with the white and brown sugar.
  • Add the eggs and vanilla and beat again, scraping sides of bowl as needed.
  • Add in the gluten free flour, salt and baking powder and mix again.
  • Add in the oats, almonds, pretzel bites, chocolate and “bacon” coconut pieces.
  • Stir until combined.
  • Use an ice cream scoop to drop dough onto the lined cookie sheet.
  • Bake in oven for 10-12 minutes.
  • Remove and cool.

Pear and Bacon Compote Brie Cheese

It’s the end of November which means entertaining season has officially begun. I have decided to share a lot more entertaining recipes and hints for the next month.
Being gluten free can mean a bit more of a challenge when hosting events or socials but it should not stop you either. I will be sharing lots of hot and cold appetizers as well as things to keep in your pantry and fridge to help in hosting last minute guests.
I am also going to share my love for antipasto platters and will show you how you can do it yourself.
Last year I shared a new cookie recipe everyday for 21 days and I will still throw in some new sweet recipes.
Today I am sharing a new gluten free appetizer recipe which involves crispy bacon, sweet and spicy pears and melted Brie cheese.
Need I say more?
This recipe is quite easy to put together too and you only need a frying pan, a cookie sheet or Brie baking dish and gluten free crackers.
Here is the recipe:

Pear and Bacon Compote Brie Cheese

Ingredients
  

  • 4 strips bacon, finely chopped
  • 1 large pear, chopped
  • 1/4 cup raw walnuts
  • 1/4 cup raisins
  • 1/4 cup cranberries
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 large Brie round

Instructions
 

  • Preheat oven to 350 degrees.
  • Heat frying pan to medium high heat and fry up bacon.
  • Cook until almost crispy. Remove bacon from frying pan and put on a plate.
  • Drain bacon fat from frying pan.
  • Add walnuts to pan and cook for 1 minute being careful not to burn walnuts.
  • Remove walnuts from pan.
  • Turn heat to low and add chopped pears, raisins and cranberries and sauté for 3 minutes.
  • Add cayenne pepper and cinnamon and stir.
  • Add bacon back to pan and continue cooking for 2-3 more minutes.
  • Turn heat off frying pan.
  • Place Brie round in a Brie cooking dish or a parchment lined cookie sheet.
  • Place Brie in oven for 5 minutes.
  • Remove Brie and top with 1 cup of the pear bacon compote and place back in oven for 3 more minutes.
  • Remove from oven and top with walnuts.
  • Serve the hot Brie with gluten free crackers.

Last week Campbell’s Canada sent me a bag of goodies.
In it was their new Gluten-Free Vegetable Broth, a gift card for me to buy groceries for a new recipe as well as coupons for me to give out to my readers.

I grew up on Campbell’s soup and when I could no longer eat gluten I was disappointed that I could not find any Campbell’s soup that was gluten free.
So you can imagine how happy I am not knowing that I can eat Campbell’s soup again.

Here was my lunch the other day.

This soup is really very easy to make and I quite liked the freshness of this soup.

Gluten-Free Chipotle Chicken Corn and Bacon Soup

Ingredients
  

  • 2 900ml containers of Campbell’s gluten free Vegetable Broth
  • 2 leftover cooked chicken breasts, shredded
  • 1 small shallot, finely chopped
  • 2 carrots and 2 celery, finely chopped
  • 1 tbsp olive oil
  • 1 tsp minced garlic
  • 1 tsp dried cilantro
  • 1 chipotle chili in can, finely chopped
  • 4-5 cobs of fresh corn (remove corn kernels from cobs)
  • 5-6 slices of bacon, chopped
  • 1 avocado for garnish

Instructions
 

  • In a large saucepan sauté the chopped shallot, celery and carrots in the olive oil for about 5 minutes.
  • Add the minced garlic and the dried cilantro and saute for a few more minutes.
  • Add the chopped chipolte chili, corn kernels, shredded chicken and vegetable broth into saucepan and stir.
  • Fry up the bacon, and then add it to the soup.
  • Bring to a simmer, cover and cook for 30 minutes.
  • With an immersion blender, blend up 1/2 of the soup.
  • This gives it a creaminess without adding cream.
  • I like to serve this soup with slices of fresh avocado on top.
  • Enjoy!

Snap Peas and Bacon

In July when I was in Seattle, snap peas were in season. Most restaurants were offering it as a side entry. At the Keg we were served a wonderful dish of snap peas and bacon. It seemed like such a simple dish to make and knew once we got home I would make it often.
Here is my version of the dish and I hope you enjoy it as much as we all do when I make it.
The ingredients are always the same: cooked bacon, snap peas, garlic, and sea salt/pepper. The amounts are completely up to you depending on how many people you are feeding. I buy the large bags of snap peas at Safeway or Costco.


This recipe is so simple:

Cut up slices of bacon and fry up. Once cooked, place cooked bacon in a separate dish and wipe frying pan out with a paper towel.



Add bacon back to frying pan, then add as many snap peas as you want. Add 1 tsp of minced garlic-and sauté until snap peas are heated up.
