Here is another salad that is super quick and easy and a great addition to barbecue season. It would also be a hit at the next picnic or in jars for lunch on your next hiking trip.
The salad is perfect as a side dish but I’ve been adding chopped barbecue chicken to the top of the salad and enjoying it as a main dish.
I am a fan of the sweetness of the watermelon, the tang of lime, the creaminess of goat cheese as well as the freshness of mint.
This is another salad recipe that I almost feel guilty writing out for it only uses a few fresh ingredients.
It may be simple in ingredients but I promise you it doesn’t taste simple-just delicious!
The salad is also great when you do not want to be in your kitchen long on hot days and it requires very little cleanup after.
Recipe: Watermelon Cucumber and Lime Salad
- 3 cups watermelon sliced into thin pieces
- 1/2 English cucumber, thinly sliced
- 1/4 cup plain goat cheese, crumbled
- 2 Tbsp fresh mint, finely chopped
- Juice from 1 lime
- Zest from 1 lime
- 2 tsp honey
- In a medium bowl combine all ingredients except the honey.
- Plate the salad onto 2 plates.
- Drizzle 1 tsp of honey over each salad.
