Gluten Free Hasselback Potatoes

With the holidays just around the corner, we could use more inventive ways to use potatoes. Potatoes are a naturally gluten free food and are also inexpensive.

Hasselback Potatoes are a great addition to any meal and look great on the plate.

Plus, they taste good!

If you want to add something truly elegant, add a drizzle of truffle oil on the top. Keep in mind though, it is an expensive ingredient.


Hasselback Potatoes

6 large white potatoes, cleaned well

4 Tbsp butter, cut into thin slices

2 Tbsp good olive oil

4 cloves of garlic, minced

Coarse sea salt and fresh pepper


Instructions: Preheat oven to 425 degrees.

With a sharp knife, cut potatoes into slices, being careful not to cut all the way through.

Leave at least 1/4 of the potato on bottom.

Place potatoes on a baking sheet.

In between the layers, place some garlic and a thin slice of butter.

Drizzle olive oil over each potato as well as a good sprinkle of sea salt and fresh pepper.

Bake in oven for an hour, basting potatoes with olive oil from pan occasionally.

Remove from oven and serve.

Before serving, a drizzle of truffle oil is wonderful.
