I love hummus! I never used to like it until I had the creamiest hummus in Toronto and decided to make some myself. Now that I have made it a number of times it keeps on getting better and better.

I really think using dried chickpeas and cooking them in my pressure cooker, plus adding the water left from cooking while processing is the key. Really whips it up and makes it fluffy.

In the grocery stores you now can find a variety of hummus flavors so why not experiment with your own flavorings and make your hummus jump with flavor.

Today I made a big batch of hummus and also made 2 different toppings.

One was a jar of green garlicky goodness and one was a tangy sun-dried tomato jar.
They were both really easy and all that is required is a food processor.

Recipe: Parsley Oil

¼ cup fresh parsley
1 jalapeno, seeds removed and chopped
2 garlic cloves
Dash of Maldon sea salt
2/3 cup good olive oil

In a food processor, process parsley, jalapeno, garlic and salt.

Once chopped up slowly add olive oil to mixture until it resembles a smooth dressing.

Transfer to a jar and store in the refrigerator.

Recipe: Sun-dried tomato topping

1 jar Mezzetta sun-dried tomatoes in olive oil ( 237 ml)
1 jar Scarpone’s Fire roasted Peppers (12 oz)

Drain liquid from jar of peppers. Add sun-dried tomatoes and peppers to food processor and process until everything is chopped up.

Transfer to a jar and store in the refrigerator.

Today I made my gluten free flatbread and served it with my hummus.
