Recipe: Gluten Free Chewy Honey Nut Snack Bars

While purchasing groceries at Safeway the other day I noticed the words Gluten Free on the cover of Canadian Living magazine. I was very surprised and of course delighted. The cover photo was Gluten Free Pad Thai, and also stated that a gluten free menu was inside. I quickly paid for the magazine and once home scoured the pages for the Gluten free section. Inside there are recipes for Gluten-Free Sweet potato pancakes, Gluten-Free Quinoa Salad with creamy tahini dressing, Gluten-Free Pad Thai, Gluten-Free Chewy Honey Nut Bars, and Gluten-Free Fudgy Brownies.

Today I tried the Chewy Honey Nut Bars. I found the recipe very easy to follow and make. I also had all the ingredients on hand and that always makes me happy.

It would be nice to see gluten free recipes as a more regular thing in Canadian Living magazine.

Here is their recipe.

Recipe: Gluten Free Chewy Honey Nut Snack Bars

¼ cup almond butter
¼ cup honey
2 Tbsp brown sugar
2 Tbsp veg oil
¼ tsp each salt and cinnamon
2/3 cup gf rolled oats (I used Only Oats)
½ cup chopped pecans
½ cup chopped dates
1/3 cup unsalted sunflower seeds
1 egg white

In saucepan bring almond butter, honey, brown sugar, oil, salt and cinnamon to boil over medium heat, stirring until sugar is dissolved, about 1 minute. Let cool slightly.

Meanwhile, in bowl, combine rolled oats, pecans, dates and sunflower seeds, set aside.

Whisk egg white into honey mixture until evenly coated.
Press firmly into a greased and parchment lined square cake pan.

Bake in 325 degree oven for about 20 minutes. Let cool in pan.

Cut into bars.
