This Burger Friday is a sweet, creamy, spicy and savory burger. I loved how all the flavors came together. Think spicy mayo, burger, hot sauce, goat cheese, and caramelized onions. All that in a gluten free bun, plus a creamy coleslaw on the side. What could be more summertime than this?

This burger may seem like a lot of work once you are done making all the sauces for it, but realize you can use them for other burgers. You will be making homemade ketchup for the spicy mayo. You will be making caramelized onions that you stirred slowly for 20 minutes. You will be making creamy coleslaw as a side. Yes, all this takes sometime, but I will guarantee it is worth it once you take your first bite.

Here are all the recipes for this burger

Recipe: Homemade Ketchup

Recipe courtesy of Michael Smith

1 can chopped tomatoes (28 oz)
1 can tomato paste (small)
1 large onion chopped
1 cup red vinegar
½ cup sugar
½ cup olive oil
2 heaping tsp nutmeg
1/8 tsp allspice
2 bay leaves
Salt and pepper

Pour everything into a saucepot and bring to a simmer over medium heat. Continue cooking until the mixture reduces by half, about 45 minutes. Puree until smooth with an immersion blender or food processor.

Recipe: Spicy Mayo

1 cup mayonnaise
1 ½ Tbsp homemade ketchup
1 ½ Tbsp Sriracha

Mix everything together. Store in fridge.

Recipe: Caramelized Onions

2 onions sliced
2 Tbsp olive oil
3 Tbsp butter
2 tsp white sugar

In a skillet, melt butter and olive oil over med high heat. Add onions and cook, stirring constantly until onions begin to soften (about 5 minutes). Stir in sugar and cook, stirring frequently, until onions are golden brown (about 20 minutes). It is important not to walk away while they are cooking for you do not want burnt onions. Be patient.

Recipe: Creamy Coleslaw

1 bag of cabbage/carrot slaw
2 Tbsp apple cider vinegar
2 tsp white sugar
1/3 cup mayonnaise
¼ cup canola or grapeseed oil
Salt and pepper
5-6 drops hot sauce

In a large bowl, whisk together the vinegar and sugar until sugar dissolves. Whisk in the mayonnaise and oil, add salt, pepper and hot sauce. Add cabbage mix and stir.
