Recipe: Cranberry Muffins

Cranberry Muffins

A light and airy gluten-free muffin with cranberries in them.




  1. Preheat oven to 350 degrees.
  2. Line a muffin tin with 9 paper liners.
  3. In a stand mixer add the oil, eggs and sweetener and beat well.
  4. Add the dry ingredients and mix on low/medium speed.
  5. Add the milk and beat again for a minute.
  6. Stir in the cranberries.
  7. Batter is quite runny. Fill muffin liners 3/4 full with batter.
  8. Bake for 22-25 minutes.
  9. Remove and cool.
  10. Enjoy!
