Three Recipes: Spicy Cabbage Slaw, Homemade Mayo, Guacamole

I grew up eating coleslaw, or as I like to call it now: Cabbage Slaw. What I realized post celiac is the slaw I had as a kid was not that great. We used bottled slaw dressing. Now I make my own mayonnaise for the slaw and add fresh ingredients to the mixture. What a difference that makes. Fresh and fast and oh so tasty.

Recently I was in Las Vegas, and while there stumbled upon a great fast food Mexican restaurant “Rubios” the food was incredible and what I loved is that they understood my gluten issues and cooked my food, my way.

I loved their corn tortillas with blackened fish and their tasty slaw.

I was thinking about those tacos today and made a variation of that dish.
So I blackened some basa fillets, made a batch of homemade salsa, some homemade mayonnaise for the slaw, and made a batch of guacamole. Then I heated up corn tortillas and we had fish tacos for supper.

The combination of the blackened spices, the heat and crunch of the slaw, and the smoothness of the guacamole was a great combination for the senses. Yum!

Recipe: Homemade Mayo

1 large egg, at room temperature
2 Tbsp fresh lemon juice (use fresh not concentrate)
2 tsp Dijon mustard
¾ cup canola oil
¾ cup olive oil
¼ tsp salt and pepper

Put the egg, lemon juice and mustard in a food processor and pulse to blend.

Combine the canola and olive oil in a glass measuring cup. With the machine running, add the oil in a slow steady stream until the mayonnaise thickens.
Season with salt and pepper.

Recipe: Spicy Cabbage Slaw

2 cups cutup cabbage (I use the coleslaw already shredded in a bag)
2 Tbsp homemade mayo
¾ tsp fresh lime juice (pls use fresh not concentrate)
2-4 drops Tabasco sauce

Combine in a bowl the slaw, mayo, lime juice, and Tabasco. Stir to combine and refrigerate.

Recipe: Guacamole

1 avocado, chopped
Juice of ½ lime
¼ cup finely chopped cilantro
¼ cup fresh salsa

In a small bowl, combine chopped avocado, lime juice, cilantro and salsa. Stir to combine.
