  1. Preheat oven to 350 degrees.
  2. Line a loaf pan with parchment paper.
  3. Melt the butter and coconut oil together in the microwave.
  4. In a stand mixer add all the eggs.
  5. Beat very well.
  6. Add the melted butter/oil and beat again.
  7. Add the rest of the ingredients except the hot water.
  8. Turn mixer to medium/high and beat batter for 2-3 minutes.
  9. Add the hot water and beat until batter is fairly light.
  10. Spread batter into loaf pan.
  11. Bake in oven for 50-55 minutes.
  12. Remove and cool.
  13. Enjoy!
