Here is the recipe for sugar cookies that I use.
Last year while surfing the internet for gluten free cookies, I stumpled upon the Land O Lakes website.
Land O Lakes is the name of a butter sold mainly, I think, in the United States. I tried the recipe out last year and it was a success. Sugar cookies is the absolute must cookie for my son David at Christmas time. He likes the full meal deal-you know, icing and sprinkles.
Here they are out of the oven-yum! Yum!
Now on the Land O Lakes website, these cookies are called “Star Cut-Out Cookies”…to me, they are a basic sugar cookie. I do not shape them-I basically just roll out a ball of dough. Pat down with my finger, place a fork on the dough and push down a little.
Sugar Cookie Recipe (aka Star Cut-Out Cookies)
1 cup sugar
1 cup butter, softened
2 egg yolks
1 ½ tsp gf vanilla
2 ¼ cups gluten flour blend(**see below)
¼ tsp salt
Combine sugar and butter in a large bowl. Beat at med speed, scraping bowl often, until creamy. Add egg yolks and vanilla. Continue beating, scraping bowl, until well mixed.
Reduce speed to low, add flour blend and salt. Beat until well mixed.
Refrigerate covered until firm(1 hour)
Heat oven to 350 degrees. Here is where I differ in the recipe-it says to roll out and then use cookie cutters as per usual for cut-out cookies. I myself, prefer to roll out into a ball individual cookies, and press down with my fingers.
Line a baking sheet with a silpat and place cookies 1 inch apart.
Bake 8-12 minutes until edges are lightly brown.
Cool completely.
**Gluten-Free Flour Blend
2 cups rice flour
2/3 cup potato starch
1/3 cup tapioca starch
1 tsp xanthan gum
(store in a container with a tight fitting lid) Mix mixture quite well.
After the cookies were cooled, I then made a typical butter, icing sugar, icing, and then sprinkled black and blue sprinkles on.

ENJOY THESE COOKIES!! They are delicious and should be added to your basic list of cookies to make.
