WARNING: this recipe is spicy!
WARNING: you will be left with garlic breath!
Really, I don’t care, because this salad is delicious. I love spice and I love flavor, so having that in a supper- salad is just fine with me. Supper-salad? It’s a salad that makes a meal. Greens, garlic, yogurt, and full protein. Supper-salads are a favorite of mine. I call this a quick and easy supper. Busy with hockey, work, gymnastics? On the way home just pick up some romaine lettuce and chicken breasts and within 30 minutes you can have supper made for the family.
This supper-salad has just a few basic ingredients:
That’s it!
Spicy Chicken Caesar Salad
5-6 chicken breasts, sliced into small nuggets, or strips
Spice mix for chicken (**)
3 Romaine lettuce heads, chopped
1/4-1/2 cup grated fresh parmesan
Spicy Caesar Dressing*
Instructions:
*While chicken is frying you can make up the dressing.
Spicy Caesar Dressing*
5 minced garlic cloves
1 Tbsp dijon mustard
2 tsp anchovy paste
1 tsp sugar
1 tsp hot sauce
1 Tbsp gf worcestershire sauce
2/3 cup plain greek yogurt (make sure it is gf)
1 Tbsp red wine vinegar
juice of 1 1/2 lemons
Instructions:
Spice Mix for Chicken**
1/4 cup sesame seeds
2 tsp red pepper flakes
1/2 tsp cumin
1 tsp gf taco seasoning
1/2 tsp dried oregano
1/8 tsp of cayenne
1/2 tsp Maldon sea salt
Pepper
Assembling Salad:
I like to make individual plates of salad. This way is someone wants more chicken, or someone wants more parmesan you can individualize the plate. Or you can add all the chopped romaine lettuce, the caesar dressing, the spicy chicken strips and the grated parmesan. Toss well and serve.
