HOW TO MAKE THE GINGERBREAD COOKIES:

  1. In a medium bowl add the non-dairy butter, honey and molasses and beat until smooth.
  2. In a small bowl whisk the coconut flour, almond flour, all the spices, baking soda and salt.
  3. Add dry ingredients to the molasses mixture and mix on low until a dough forms.
  4. Place dough in the refrigerator for an hour to chill.
  5. Preheat oven to 325 degrees.
  6. Line cookie sheet with parchment paper.
  7. Place a sheet of parchment paper on counter and place half the chilled dough on it.
  8. Place another sheet of parchment over top and carefully roll out.
  9. Cut dough with the gingerbread people cutters.
  10. Place on lined cookie sheet and bake in oven for 7 minutes.
  11. Remove and cool before icing them.

  • In a small bowl whisk the coconut flour, almond flour, all the spices, baking soda and salt.
  • Add dry ingredients to the molasses mixture and mix on low speed until a dough forms.
  • Place dough in refrigerator for an hour.
  • Preheat oven to 325 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Cut another 2 sheets of parchment paper.
  • Place one sheet of parchment paper on counter and place 1/2 chilled dough on it.
  • Place the other sheet of parchment paper on top and then roll dough until thin.
  • Remove top sheet.
  • Cut dough with cookie cutters.
  • Place cookies on cookie sheet and bake for 7 minutes.
  • Remove and cool.
