I love this time of the year when lights are twinkling, trees are decorated, stockings are hung and the smell of cinnamon fills our houses.

There is just something about making your own homemade cookies that makes me happy! Especially during the holiday season. This gluten-free gingerbread cookies recipe will become your new holiday favourite. They are perfectly spiced and lightly drizzled with royal icing.

HOW TO MAKE THE GINGERBREAD COOKIES:

  1. In a stand mixer or hand mixer and bowl, add the vegan butter and brown sugar.
  2. Mix on medium speed.
  3. Add the baking powder, baking soda, spices and salt and mix on low speed.
  4. Add the egg, molasses and apple cider vinegar and mix on low speed until well combined.
  5. Scrape sides of bowl to incorporate all.
  6. Add the gluten-free flour and mix on low speed.
  7. Increase speed to medium and beat for a couple of minutes.
  8. Remove dough and place in a small bowl and refrigerate for 3 hours or overnight.
  9. Preheat oven to 375 degrees.
  10. Line 2 cookie sheets with parchment paper.
  11. Lightly flour the countertop with tapioca starch.
  12. Divide dough in half and use a rolling pin to roll out dough.
  13. Cut dough with various cookie cutters.
  14. Place shapes on parchment paper.
  15. Bake in oven for 9-10 minutes.
  16. Remove and cool.

  • Add the baking powder, baking soda, spices and salt and mix in.
  • Add the egg, molasses and apple cider vinegar and mix on low speed.
  • Scrape sides of bowl and beat mixture well.
  • Add the gluten free flour and mix on low speed.
  • Increase speed to medium and beat dough really well.
  • Place dough in refrigerator for 3 hours or overnight to chill.
  • Preheat oven to 375 degrees.
  • Line 2 cookie sheets with parchment paper.
  • Lightly flour the countertop with gluten free flour.
  • Divide dough in half and roll out with a rolling pin.
  • Dust dough lightly with gluten free flour before rolling to prevent sticking.
  • Cut out dough with various cookie cutters.
  • Place on cookie sheet and bake for 9-10 minutes.
  • Remove and cool.
  • Enjoy!
