Recipe: Cranberry Walnut Chocolate Cookies

As promised I will be sharing recipes that I enjoy and that I have found work out really well.

Recently I started subscribing to a magazine called Delight Gluten Free. I found this magazine on the internet and was very impressed with the Fall issue. It is absolutely FULL of recipes. So, again, I am baking and cooking my way through this magazine (please Dr. McKenna, if you are reading this- don’t worry, I am watching my portion sizes).

I made the Cranberry Walnut Chocolate Cookies on page 87. They turned out FANTASTIC! Here is the recipe:

2 1/2 cups blanched almond flour
1/2 teas salt
1/2 teas baking soda
1/2 cup grapeseed oil
1/2 cup agave nectar
1 tables vanilla extract
1/2 cup dried cranberries
1/2 -1 cup walnuts
1/4-1/2 cup dark chocolate chips

Set your oven to 350 degrees. In a large bowl, combine the flour, salt and baking soda. In a smaller bowl, combine oil, agave, and vanilla. Stir wet into dry. Mix in cranberries, walnuts, and chips. Using an ice cream scoop, scoop out balls onto silmat lined baking sheet.

Bake at 350 for 7-10 minutes. Cool and serve.[/print_this]

Let me know what you think of these cookies. I put the cookies into a small container after they have cooled, and store them in the refrigerator.

These are my favourite cookies at the moment – I could eat the entire batch on my own!
